Sweet and Sour Fish Fillet

This is one of my kids favorite low cholesterol fish recipe that I am happy to cook for them.

I used white cod fish because it is low in cholesterol, low  in  calories and high in omega fish oil which is suitable for  growing kids and elderly folks. 

It is a highly nutritious meal since fish is extremely high in  protein and vitamins.

Sometimes when I couldn’t find white cod fish, I would buy garoupa  fish fillets or red snapper  thick slices that are full of flesh and less fish bones.

You might be surprised that why my kids would love this Sweet and Sour Hot Fish Fillets since the title says it is hot.

To be honest, it is not spicy, hot fish flesh coated with sweet  and sour sauce, a mixture of sugar  and tomato sauce  did the trick to convert the sauce chili sauce into mild spicy.

This sweet and sour hot sauce is suitable for kids and non-spicy food consumers.

Alternatively if you would like to have a REAL hot sauce, replace the tomato sauce with chili paste that you could purchase at  wet market or supermarket under the herbs or sauce  department. In addition, exclude the sugar too.

Tips and tricks

Replace the sprig Chinese parsley with:

  • Chopped spring onions
  • Basil
  • Rosemary
  • Dried oregano 
  • Dried mixed herbs

As for the dipping sauce, I chose mayonnaise which turns out  super delicious when I dipped each fillets into lots of  mayonnaise that I ran out of it!

Don’t like mayonnaise?

Try salad dressings such as Thousand Salad, Coleslaw dressing, Fruit Dressing or just plain sweet black sauce.

 

 

Prepare time: 5 minutes

Marinade time: 15 minutes

Cook time: 25 minutes

Yield: 3 person 

 

 

Ingredients

  • 300g fish fillet – garoupa, fish cod, red snapper
  • 1 egg white-slightly beaten
  • Some corn flour for coating the fish fillets
  • 1 sprig Chinese parsley

Marinade:

  • Salt and pepper
  • 1/2 tsp sugar
  • 1 tsp ginger – chopped

 

Sauce: (mix together in a bowl ) 

  • 2 tbsp chili sauce
  • 1 tbsp tomato sauce
  • 1 tsp sugar
  • 1tsp white vinegar
  • 1 tsp oyster sauce

 

Thickening solution:

1 tsp corn flour mix with 100 ml water-mix well

Step by step cooking method:

Briefly wash fish fillet under running water and pat dry with a  kitchen towel or tissue.

Cut fish fillet into small squares or rectangular shapes.

Marinate the fish fillet for 10 minutes. 

Allow the salt and pepper to absorb into the fish fillet.

Beat egg whites in a small bowl. 

Dip in 1 fish fillet at a time into it.

Then, lightly coat it with corn flour until both sides are coated well.

Heat up wok or frying pan with more oil.

You will need sufficient oil in order for the fish fillet to cook well instead of absorbing the oil.

 

Deep fry the coated fish fillet for a few minutes. 

Flip over to the uncooked side until golden brown.

Remove them, place onto kitchen tissues to absorb the excess oil.

Remove the oil from the wok. Leave approximately 1 tbsp in it.

Saute chopped garlic and onions until aromatic.

Pour in the mixed sauces, add in a little water and corn flour  solution.

When the sauce had thicken, quickly toss in the fried fish fillets.

Coat the fish fillet well with the sweet and sour hot sauce.

Turn off heat. Transfer the fish fillet on a flat plate.

Garnish with chopped parsley or spring onions.

Serve immediately with white or brown rice.

Your family won’t be bored with fish anymore.

      Between fish allergies and the fact that hubby really dislikes anything but commercially prepared fish and chips, I haven't cooked with cod in years. I think I will get some soon, though, and try your recipe. I know my kids will like it!

    • This is my favorite. However, my wife who knows best of my food's favorite has prepared this for me alone. My children, my grandchildren have a different food preference.

      Every time I attend a conference which is serving food for us, this kind of food preparation I always look for.

      It is difficult to find restaurants that serve local asian recipes unless you stumbled upon friends recommendation.

      However it is fortunate that your wife understands what you like best.

      My family are adapted to spicy food , so it is easier for me to cook one fish that everyone loves.

      Sometimes i replace the fish with chicken, pork or squid, change the variety.

      Commercial prepared food isn't healty. Better buy dory fish, cod fish or garoupa fillets and cook at home.
