Easy Homemade Chicken Fajitas for Breakfast

Initially, when I saw Chicken Fajitas served in a Western Restaurant that I had dined in with my old classmate, I thought that it was alike McD Brekkie Wrap except for the extra veggies and delicious sauce that had lingered in my brain.

 

I had looked up in the Internet what Fajita was.

It is actually a Mexican dish, somewhat alike snack, a combination of grilled meat served in a corn tortilla or with taco, mixed with assorted vegetables and an unique sauce.

 

Some people prefers chicken, beef, pork, lamb or even shrimps in the fajitas. Of course not forgetting, there are vegetarians Fajitas too, all veggies in the wrap.

 

If you dine in restraurants, most Fajitas are served with meat of your choice, combined with sauted onions and bell peppers, sour cream, cheese and tomato.

 

However, I decided to opt off the sour cream since my kids do not like any of it.

Instead, I replaced it with plain original yogurt which goes well with the marinated meat and tortillas.

 

You can also repalce the veggies with others that you have in hand, such as carrots, yam beans, avocados or bean sprouts!

 

 

 

Chicken Fajitas

 

Ingredients:

  • 55ml white wine or any wine
  • 2 limes- grated and squeezed out the lime juice
  • 1 tsp Worcestershire sauce
  • 2 tsp brown sugar
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 clove garlic-chopped
  • 1 medium onion-peeled and sliced into rings
  • 4 chicken fillets or chicken breasts-skinless and remove fats
  • Olive oil
  • 2 stalks spring onions-chopped
  • 1 small red bell pepper (capcium)-remove seeds and sliced into strips
  • 1 small green bell pepper (capcium)-remove seeds and sliced into strips
  • 8 pcs wheat flour tortillas-warmed
  • 150ml original flavored yogurt
  • Half cup of sweet corn kernels and kidney beans from the can
  • 1 small zucchini-peeled and sliced into strips

 

Method of making:

  • Cut int chicken breast into thin slices.
  • Let’s prepare the marinade sauce for the chicken.
  • In a bowl, mix in the wine, grated lime and juice, Worcestershire sauce, brown sugar, dried basil and oregano, chopped garlic. Mix well.
  • Now, add the slices of thin chicken into the marinate sauce, coat them well and leave in the fridge for 30min .
  • In a frying pan, heat up with a little olive oil.
  • Saute the chopped spring onion, red and green bell peppers and onions until crisp and semi-cooked.
  • Remove the cooked vegetables from the pan. Set aside.
  • Heat up the pan with more olive oil.
  • Lift up the marinated slices of chicken, place int the pan to cook.
  • Make sure both sides of the chicken are cooked and turned golden browned.
  • Remove from the pan, set aside.
  • Remove the excess oil.
  • Heat up the pan, pour in the remainder marinade sauce.
  • Return the cooked chicken and the cooked vegetables back into the pan. Coat the ingredients well with the sauce.
  • Put the warmed tortillas on a plate.
  • Place the chicken mixture in the middle of the tortilla, spoon over some yogurt and zucchini over.
  • Roll up and start munching!
  • Serve the corn kernels and kidney beans as side dish with this delicious meal.

    • I like tacos, being sold at the supermarkets. They look just like that in the picture and they taste so delicious.

      There are beef strips being stripped from a grilled beef still in a big skewer. Then there are cabbage strips and some more veggies i haven't seen but have chewed as delicious, because it is with a spicy sauce made of mayonnaise and i think mustard.

      Looking at the ingredients of the chicken fajitas of yours, it seems it has lots of ingredients, but will be worth the try and money, because it looks so delicious too. :)
