Stir fried noodles is one of the staple food in Asian
countries.
Chow Mien is the direct word from Chinese which
means Fried Noodles.
My favorite version of noodles will be the homemade
Stir Fried Noodles with Cabbage that was created by
my mother-in-law.
I particular love the fresh egg noodles that she used
instead of the regular yellow noodles which are oily
and high in cholesterol.
Fresh egg noodles are ideal of stir fried
noodles-dry version, soup noodles and stir fried
noodles-wet version.
It is impossible to catch a sight of fresh egg noodles in
the market because it is not popular and a little bit
higher in price compare to the regular yellow noodles.
Most vendors sell dried egg noodles sold in packets
that resembles instant noodles.
It comes in 8-10 pieces of dried egg noodles
per packet which you could whip up at least 4 plates
of delicious noodles with your favorite vegetables or
meats.
My mother-in-law prefer to add in cabbage into
noodles because it is cheaper.
A whole head of cabbage could last her 1 month of
cooking different cabbage recipes!
Today, I managed to take a glimpse how my
mother-in-law cooked her popular Stir Fried
Noodles with Cabbage.
Here is the recipe …
Ingredients:
Seasoning
Method of cooking
Heat up wok with 2 tbsp of canola or sunflower oil.
Saute garlic and onion until fragrant.
Briefly wash the egg noodles in a strainer before cooking.Add in fresh egg noodles and stir fry for 2-3 minutes.
Add in a little vegetable stock if the noodles begin to
stick to the wok.
Add in the cabbages, carrots, french beans , stir fry for
about 10 minutes to soften them.
Add in the oyster mushroom
Pour in the remainder vegetable stock and add in all
the seasoning together.
Fry the egg noodles, tossing high with the spatula in
order to prevent the noodles from sticking to each other.
Lastly, sprinkle salt and pepper to taste.
Serve immediately
If nobody is hungry yet ( you cooked too early), transfer
the Stir Fried Egg Noodles with Cabbage into the rice
cooker and press Keep Warm.
Tips:
If you couldn’t find mirin, replace it with Vegetarian
Sauce ( Oyster sauce the vegetarian type- Lee Kum Kee
brand )
If you don’t like cabbage, replace it with any leafy
vegetables such as mustard green, kale, spinach of
salad leaves.
If you don’t like French Beans, simply don’t add it in.
If you can’t find fresh egg noodles, buy dried egg
noodles.
Soak 4 pieces of dried egg noodles ( for 4 person ) in
water.
Then, bring a soup pot of water to boil.
Toss in the egg noodles, use a chop stick to loosen them.
When the noodles had turned soft alike instant noodles, turn off heat.
Strain the noodles in a strainer and set aside.
Enjoy my mother-in-law Chow Mien for a change!

I always love noodles as my breakfast. It is easy to cook and always ready because it can be stored for a long time so long as it is not yet expired.

Noodles is the easy thing to eat but not for breakfast and now i started to replace it with macroni as its healthier not sure whay but that i read online, anyway, i like it and liked the delicious recipe, thank you for sharing for this recipes
