This is one of the MUST recipe for Chinese New Year, Stir Fry Crispy Vegetables with a wide range of healthy vegetables .

This recipe brings out the vibrant and attractive contrast color with crisp texture and flavorful taste.

Vegetable recipes are packed with loads of fibre which helps to reduce constipation, healthy for skin and body tissues.

Most people doesn’t like ONE type of vegetable dish.

So, it is best to mix assorted vegetables in a dish in order for your family members, especially your kids to consume different nutrients from this delicious meal.

Nutritional Value of this recipe

I had used assorted vegetables in this simple stir fry recipe which is ready in 20 minutes of less. Notice that most of the vegetables are sweet in nature. Your kids will definitely like to eat this vegetable dish very much!

Sweet peas which is also known as snow peas or snap peas are sweet in nature and crunchy.

Water chestnuts, a water vegetable that grows in the marshes. They are high in potassium and fibre. Suitable for low carb consumers and weight loss teenagers. You can eat them raw, toss into salads because they are naturally sweet in nature.

Young corns or you could also replace them with corn kernels, packed with fibre, helps to reduce constipation.

Carrot which is known beneficial for your eye vision and high  in beta carotene.

Celery is crunchy , high in potassium, excellent source of anti-oxidant, low in calories and beneficial of enzymes ( digestive tract )

This vegetable recipe is easy to prepare and quick to cook in just 20 minutes.

The secret to make a successful meal that becomes a hit among your kids and hubby is to saute onion, young ginger and garlic to aromatic smell.

Seasoned with evaporated milk, light soy sauce and vegetarian concentrated sauce ( vegetarian oyster sauce) to enhance to sweet and tasty flavor.

Vegetable Substitute

If you are out of certain vegetables in this recipe, you could replace them with other type of sweet tasting vegetables such as:

Green leafy vegetables are not ideal ingredients because they taste a little bitter, raw and bland in nature

 

Stir Fry Crispy Vegetable

Ingredients

  • 2 tbsp sunflower / canola oil
  • 1 medium onion- sliced
  • 3 slices ginger
  • 2 cloves garlic-minced
  • 4 dried black mushrooms / button mushrooms – soaked in hot water and sliced thinly
  • 1 packet sweet peas / snap peas-remove strings
  • 1 handful water chetnut- peeled and sliced thickly
  • 5 young corns-remove the leaves,briefly washed , cut diagonally
  • 1 small carrot-peeled, sliced thinly
  • 2 sticks celery-washed and cut sections
  • 2 stalks spring onions- chopped
  • 1/2 cup water
  • 1 tbsp evaporated milk
  • 1 tbsp light soy sauce
  • 2 tbsp vegetarian concentrated sauce
  • 1 tsp corn flour mix with 1 tbsp water
  • dash of sesame oil and pepper

 

Cooking steps for Stir Fry Crispy  Vegetables

  1. Bring wok to heat.
  2. Add in oil
  3. Saute garlic, onion and ginger until fragrant
  4. Add in mushrooms and celery because these ingredients take longer time to cook.
  5. Add in the remainder vegetables into the wok. Stir fry a couple of minutes
  6. Pour in light soy sauce, concentrated stock, milk and water.
  7. Allow to simmer for 5 minutes
  8. Lastly, thicken the stock with cornflour mixture.
  9. Before turn off heat, add in sesame oil and pepper.
  10. Serve immediately with white / brown rice.

Yield: 3-4 persons

Ready in 20 minutes
