Coconuts grow very well where I live. I have a few coconut palms. They not only add coolness to the place, every part of it is useful. Matured coconuts are used in curries and desserts. Coconut oil is extracted and the coconut cake is fed to cows. The husk is used in making coir mats and other useful articles.
Tender coconuts are a favorite of many. Specially in summer beaches are loaded with tender coconut hawkers. The water is considered good for urinary issues although those with kidney infection and failure are banned from drinking it. Coconut water is high in potassium and therefore those with kidney infections and failures should not drink it.
I tried my hand at making ice cream with tender coconut and it turned out successful
I used 3 tender coconut meat, its water, 3 tablespoons of milk powder, 3 table spoons of butter, 3 tablespoons of sugar and a flavoring. The coconuts should be just right. They should have tender meat and if it is hard meat then it cannot bused. The coconut pluckers have knowledge about this.
I melted the butter and added it to the milk powder which was dissolved in hot water. I put the coconut meat in a blender and added it to the milk and butter mix. I added the sugar and a flavoring. I chose vanilla essence. . This was then put in a blender and whipped until the entire matter got thoroughly blended. I did not use any coloring.
This mixture was then kept in the fridge until it hardened. It was taken out the next day, after thawing it a bit, it was once again placed in the blender and thoroughly mixed This process was repeated again so that all ice crystals formed dissolve.
My ice cream was ready. It tasted delicious. There ice cream making machines available and I am sure they could give better results.

I love coconut in every way. The taste is just so delicious. I have used dessicated coconut in buns and cake, I use the coconut milk in rice dishes and curries yummy. Then the oil is useful on the body as well as the hair very healthy for cooking as well. It is especially very good for people with high blood pressure. Thanks for the tips

I thought at first this was a recipe for coconut milk ice cream. That I eat because I am allergic to regular milk. You should try making that with coconut sometime as it's very good!
I love your post! You are creative obviously. I also love coconuts and do enjoy desserts, sweets, drinks made of them. I have had frozen yogurt made from coconut. I have never seen or eaten any ice cream made with coconuts, making your recipe interesting for me. It is something that I could try to make on my own. I do have a portable ice cream maker at home. I do agree with Onyedikachi; a picture would have helped.
