Sweet Dessert: Red Beans Soup

Red Bean Soup is one of my favorite Chinese dessert soup that my

 mom used to make for our family to drink during cold weather.

This sweet dessert recipe is made from Red Beans which is also 

known as Red Adzuki Beans, sweetened with palm sugar and rock 

sugar with aromatic fragrance from the addition of screwpine

 leaves ( Pandan Leaves ).

 

It is a wonderful and comfort beverage and meal that you will love 

as a complimentary dessert after morning breakfast or lunch.

I remembered so well when I cam back from school during my 

primary school years, smelling the fragrant Red Bean Soup that

 had flowed throughout the household that lead me to the kitchen,

 simply had the urge to open up the lid of the soup pot, to smell the

 aromatic smell.

My mom did taught me how to make this Red Bean Soup before

 she had stroke and I was fortunate to had jot down the recipe.

What you need to prepare

It is a combination of raw red beans, ginger, screwpine leaves

 ( compulsory), palm sugar, rock sugar, coconut milk and sago.

How long would it take

Since red bean soup uses raw beans, you will need to simmer it for

 hours with a gas stove.

Hence, it would be wise to use a slow cooker to simmer it from

 morning to afternoon at low speed.

Otherwise, you could use a pressure cooker to speed up the process

 of boiling the sweet dessert soup in 30 minutes.

You can buy all the ingredients for the red bean soup at any wet

 market or supermarket.

Coconut milk

If you want to produce a fragrant coconut milk, use raw grated 

coconut which you can buy from grocery shop.

1 coconut could make 4 thin coconut milk and 1 cup of thick 

coconut milk as you squeeze them out with your bare hands.

Otherwise, you could buy a small box of coconut milk but it won’t 

taste as sweet as the original.

Alternatively, you could resort to a cheaper source, buy 1 packet of

 coconut powder, mix with 200ml of warm water but it may taste a 

little bland.

I would recommend you to go for the fresh grated coconut and you

 will be pleased with the delicious Red Bean Soup that blows your 

mind away with delight.

 

Here is the recipe for Red Bean Soup.

Ingredients required

300g red beans

2 slices of young ginger

3 screwpine leaves-tied to a knot together

2 tbsp palm sugar or brown sugar

3 medium rock sugar

4 cups thin coconut milk

1 tbsp of sago

 

Method:

1. Boil the red beans in 4 cups of water until the beans expand.

2. Add in the ginger, screwpine leaves and sago.

3. Add in palm sugar and rock sugar.

4. Stir until the sugar dissolves.

5. Put in the thin coconut milk and bring to boil.

6. Pour in the thick coconut milk. Stir constantly.

 Don’t let the soup burnt.

7. When the sago beans become transparent ( not white ) and 

shiny, remove the screwpine leaves.

8. Scoop up a little red beans, test out the tendency.

9. If the red beans are soft, the sweet dessert soup is ready.

10. Serve hot in small bowls.

11. Yield: 4 persons

What is Sago

Sago is a starch extracted from the centre of the palm stem.

 The shape is alike mini pearl, white circle and smooth.

 However, when it touches water, it turns moldy and sticky.

What is Screwpine Leaves

The original name of this plant is “Daun Pandan” which is 

easily grown in Malaysia and other countries under tropical 

weather. Screwpine leaves whether bruised, boiled or extracted

 juice produce fragrant smell which enhanced the taste of

 meats and sweet dessert soups.

What is red bean?

Red beans are also called as “Azuki beans” .

They are dark red in color, small seeds in size which is 

different from kidney beans.

            I do eat rice everyday, white rice not brown rice.
            We have to eat rice daily because it is the staple food in Malaysia.

            I am slim because I don't have gall bladder.
            Was removed 10 years ago due to gall stones.
            So my weight maintained 45kg since then.

      • yes indeed it is a meal by itself. Taste great if you having toast bread with your favorite jam or fried fritters. This is a common dessert soup among us Asian for tea time snack or morning breakfast.

        You can cut down on the sugar, and the coconut milk to have a clear, smooth, light, red bean soup.

    • @peachpurple I wish I have the time to make one. In my city, we use these raw beans as an ingredient for a meal. It tastes good when eating a meal with the rest of the family members.

    • Oh this one looks nice! I love to have it as an ice kachang or mixed with other sweetened things in a Filipino dessert called halo-halo :) Yum!

    • I will make it at my home very soon because I am fond of cooking self for self not for others. It is a delicious soup. First of all get yourself some red beans, also known as adzuki beans. It's a good idea to get this kind of stuff from a trusted vendor at the wet markets in Hong Kong.

      They will usually have superior quality stuff which is reassuring as all beans look the same to me. The wet market vendor I go to is a super grouchy old guy with bushy white eyebrows who growls me whenever I ask a question but his merchandise is pretty good. I guess that's why he growls?

      Be sure to soak the red beans properly and then discard the soaking water. This will solve the problem of any, um, "extra air" after consumption of the beans. The traditional red bean dessert recipe also calls for dried tangerine peel , or Chenpi 陳皮, which you can also get at your local wet market. Sometimes you can see these tangerine peels hung in long festive coils from the ceilings of the dried goods shops as they air dry.

      These Chenpi are used for many chinese dishes. They have an distinctive woodsy citrusy flavor that improves with age. Actually the aged tangerine peels can get very expensive!
