Shredded Chicken in Pancake Rolls

There is no limit to using chicken in preparing great dishes. And with broilers that we get which are tender they cook fast and are tasty too. One needs to be careful though while checking whether the chicken is fresh.

Although deep fried dishes are not regular in my diet I occasionally indulge in such food. My favourite is chicken pancake rolls. Those who have tasted them tell me they are great. Here is the recipe.

This quantity should serve six.

  1. quarter kilo chicken
  2. one teaspoon ginger garlic paste
  3. 1 medium sized tomato
  4. 1 medium sized capsicum
  5. half teaspoon spice powder – optional
  6. chilli powder, salt to taste
  7. one onion
  8. 1 cup maida
  9.  two eggs

10 oil for frying

11  coriander leaves

Boil and shred quarter kilo chicken. Chop onion fine and fry in ghee till brown. Add ginger garlic paste and stir for awhile. Add shredded chicken, chopped tomato, chopped capasicum,  chilli powder and salt to taste You can add a little bit of spice powder. Cook till tomatoes and capssicum  are done. Simmer till the water is fully absorbed.  Add chopped coriander leaves. Let it cool.

For pan cakes use 1 cup maida. 1 cup will give you 6 pancakes. Prepare pancakes as usual. Adding an egg to the batter the pancakes can be easily removed from the frying pan.  Do not fold. Let them cool

Fill pancakes with the the chicken mixture and prepare rolls. Dip the roll in beaten egg and sprinkle some corn flour over it.

When the oil is sufficiently hot, drop the rolls in the oil and deep fry them. Remove on kitchen tissue to drain out the oil.

Serve them hot  with tomato ketch up.

Pancake rolls could be made with any other type of filling such as prawns or even vegetables using the same recipe. Care however needs to be taken that the stuffing is fully dry.
