In these days where time is of the essence we look for shortcuts everywhere.
Time spent in the kitchen could be saved if we have recipes that are tasty and yet quick to fix. Getting food from out could solve the problem but nothing like home cooked food. Home cooked food is guaranteed to be clean and could be trusted.
I am forever working on such recipes and surprise those that sit at the dining table. I have a few salads, fish dishes and chicken too.
Here is a summary of the chicken dish which I have named.
Instant Chicken’
You need to cut the chicken in sizeable chunks. Chop about 4 large onions in square bits. Chop about 4 large tomatoes. Slice a large onion thinly. Take a good amount of ghee and fry the sliced onion. You can also use olive oil for frying the chicken. When the onion turns brown add the chicken chunks and keep stirring till liquid oozes out. Put the chopped onions and tomatoes and cook on slow fire till done. Add spice powder, pepper powder and salt to salt. A mix of cinnamon and clove seems ideal for this dish. Care needs to be taken to see that just enough spices are used.
Scrape the skin off a few potatoes and slice them. The look good if they are sliced in the shape of orange segments. Soak them in salt water for about half an hour. Squeeze out the water and deep fry them. The fried potato slices can be placed around the chicken dish but not mixed. If they are mixed in the chicken dish they will absorb all the liquid. They could also be kept in a separate dish.
This dish should be eaten hot with either bread or chapattis.
I prefer to make a huge quantity,some portion of which I freeze for future use – another way to have a quick fix.

Well I must admit, you got a real quick chicken recipe here.
It is a stir fry version with less ingredients involved.
I love short cut meals. This one is a must try meal.

By the way, why do you have to soak the potatoes into salt water?
Is it used to reduced the blackish potato?
I usually sprinkle a little salt, deep fry them in a wok with lots of oil.
Too little oil, would induce the potatoes to absorb the existing oil.

It is n easy recipe for lazy women or those who have less time for cooking at home and all day sleep. I like this recipe and I will make it someday at home.
