Moist Banana Nut Bread Recipe

This Moist Banana Nut Bread recipe is quick and easy to mix together. To keep the bread moist to not over bake. The bread also freezes well and great for gifts. You can make in the mini loaf pan for co-worker or single friends. Just leave in the pan and cover with plastic wrap and tie with a ribbon!

Ingredients needed for Moist Banana Nut Bread:

2 1/4 cups flour
2 cups sugar
3/4 cup vegetable oil
1/2 teaspoon salt
3 large eggs
1 teaspoon vanilla
1 1/3 teaspoons baking soda
1/4 cup buttermilk
1 cup chopped pecans
4 -5 bananas, use completely black bananas
Directions for making Moist Banana Nut Bread:

Step 1: Heat oven to 350 degrees Fahrenheit. Grease or spray 2 loaf pans.

Step 2: In a large bowl, mash the bananas with a masher or by well washed hands.

Step 3: Dissolve the soda in buttermilk, use a larger container as it will foam up quite a bit.

Step 4: Mix all the ingredients by hand combining well.

Step 5: Add in 1 cup of the chopped nuts, mix well.

Step 6: Bake at 350 degrees Fahrenheit for one hour, or until a toothpick comes out almost clean.

Step 7: Let bread cool for 15 minutes after removing from oven and remove from pans.

Cream Cheese Spread

8 ounces cream cheese, softened
1 teaspoon vanilla extract
1 cup powdered sugar, sifted
2 tablespoons butter, softened

Step 1: Place in a medium size bowl the cream cheese, butter, powdered sugar, and vanilla extract.

Step 2: Mix together with an electric mixer.

Step 3: Store in refrigerator until ready to use.

Step 4: Slice the bread and spread with cream cheese.

Tips

Double or triple the recipe for more loaves and freeze some to use later, cool completely before freezing.

Totally clean toothpick when checking if done, will mean a dryer banana nut loaf, you do not want this to happen!
