Garlic Herbs Baked Potatoes

Many people believed in the wrong myth that potatoes are  fattening and full of bad cholesterol. 

 

Well, those myths are wrong because only those who does  consume potatoes 365 days in a year,  would have high  cholesterol and obesity plus overweight problems due to  sedentary lifestyle.

 

Potatoes are extremely high in fibre and vitamin C, particularly baked potatoes because the skin itself is high in potassium.

 

Hence, I decided to bake some potatoes for lunch instead of  the regular, boring fried rice, everyone is sick and tired of it!

Garlic Herb Baked Potato Recipe

Preparation time: 10 min

Baking time: 30 min

Yield: 4 persons

Ingredients

  • 3 large or medium size potatoes
  • 4 tbsp butter cut into small thick slices
  • 1/2 tsp all spice powder
  • 1.5 tsp dried oregano
  • 1/2 tsp garlic powder 
  • Salt and pepper to taste

Step by step Instructions:

Preheat oven to 220C. Lightly grease baking sheet on cookie  tray.

Wash and scrub all potatoes until clean.

Do not peel the skin off. 

Leave the skin intact for potassium nutrition.

Bring a soup pot to boil. 

Add in 1 tsp of salt. Toss in all cleaned potatoes to boil.

Boil for 10 min under medium fire.

Use a fork to poke into potatoes.

If the fork easily pokes into them, feel soft, the potatoes are  cooked.

Drain the potatoes. Set aside.

USe a sharp kitchen knife to slice each potato with a few slits from top to the middle.

Do not cut all the way through.

The slits in the potatoes are purposely done.

Slip in each butter slices into each slit.

This is done to enhance the buttery taste by allowing the potatoes to absorb them.

Spread the remainder butter all over the skin.

Place all the 4 potatoes onto the baking sheet.

Leave a little space apart.

Sprinkle both herbs, garlic powder , salt and pepper all over the potatoes.

Heat up a frying pan with olive oil.

Chop 3 cloves of garlic, pan fry until brown and crispy.

Scatter chopped garlic on top each potato.

Bake potatoes for 30 minutes.

Remember to flip over the potato in every 10 minutes in order to make sure the other of the uncooked potato are well cooked.

Serve hot Garlic Herb Baked Potatoes with par-boiled vegetables and fresh salads.

This is a wonderful and healthy lunch for all.

 

Tips:

You can replace the following ingredients:

All spice powder = dried thyme

Dried oregano = dried rosemary or freshly chopped oregano

Garlic powder = mashed up garlic

In order to choose the right potatoes;

  • Do not choose potato with shoots
  • Do not choose potato with green skin
  • Do not choose potato with “eyes” stub
  • Do not choose abnormal shape potato
  • Do not choose potato with skin peeled
  • Do not choose wet or damp potato
  • Choose large or medium oblong shape potato

 

Potato Benefits

Potatoes belonged to one of the root vegetables that are easily bought in wet market and supermarket.

They are the staple food in UK, USA and Northern Europe but  in Asian countries, potato are highly consumed in fast food  restaurants ( French Fries and mashed potatoes ).

Potatoes are not fattening food.

On contrary, they are beneficial to our body.

  • They are rich in soluble fibre which is compulsory for a  healthy bowel movement. 
  • Prevents constipation for adults and kids due to fibre  content
  • Helps to reduce high cholesterol levels
  • Provide food for the probiotic beneficial bacteria that live in the gut
  • Protect vital organs to decrease cardiovascular problems ( heart disease)
  • Helps to lower high blood pressure since potatoes  contain magnesium, calcium and high in potassium

  • No cholesterol
  • High in Potassium
  • Protein
  • Fibre

  1. Avoid deep fried potato chips
  2. Boil potato and baked with herbs
  3. Roast potato with skin and garlic
  4. Use olive oil and dried or fresh herbs for mashed  potatoes
  5. Buy organic potatoes so that you can eat nutrient rich  skin
  6. Blend fresh potato with apple and carrot for stomach  ulcers
