My daughter often ask me “What’s for dinner?”,
every time she comes back from school late in the
evening.
If I am at home the whole day, I could prepare a
wholesome, delicious home cooked meal for my
family as I have ample time to prepare and plan
ahead meals for the day.
However, there are times when I had to be out
the whole day paying various bills, grocery
shopping or visit my mom which may take up
almost half of the day.
Hence, with insufficient time to defrost the frozen
meats or fish and soaking vegetables, I had to opt
for a take out or dine at roadside stall for a quick
dinner.
In fact, I would rather my family eat homecooked
meals at home even though time is tight.
What do you suggest?
What is some easy and cheap dinner to cook at
home in 20-30 minutes?
If you have overnight cold rice in the fridge, this
will make a wholesome meal for your family with
a little spicy black pepper taste to your regular
fried rice. Just mix some chopped vegetables,
chicken or pork fillets and a sachet of black
pepper paste to season the overnight rice.
If you are out of black pepper, you could also use
black pepper sauce for BBQ or simply sprinkle
black pepper powder over the rice, season with
light soy sauce.
This is my regular favorite dinner idea, noodle
soup which is as quick as instant noodles.
Rice vermicelli easily soften in hot boiling water,
in seconds.
Drain them, rinse under cool tap water to loosen
the noodles.
Stir fry with any meats and vegetables available
in your fridge, season the sop with Knorr Chicken
or Anchovy Stock cube will do the trick.
My kids love fried hotdogs, hams and scramble
eggs as the side dish.
You can sprinkle some fried shallots to enhance
the flavor of the noodle soup.
If you are lazy to cook, might as well go for the
easy way out, grab a bag of pitta on the way
home and make sure you have some cheese and
fresh cooked salmon or get a can of salmon
instead.
Lightly pan fry the salmon until brownish, mash it
with the back of a fork.
Mix the cooked salmon with soft cheese or grated
cheese, spread on top of toasted pitta bread and
enjoy a light, healthy dinner in just minutes!
Another regular favorites of mine, fried rice with
canned tuna flakes..
This is even simpler than Black pepper fried rice.
Open up a canned of tuna flakes with brine
( don’t buy tuna with mayonnaise because that
is only suitable for sandwiches, not fried rice).
Remove the tuna flakes from the brine, mash the
m with the back of a fork.
Chop some carrots, green beans or any leafy
vegetables.
Crack an egg to coat the overnight white rice.
Season with salt and pepper.
Don’t willing to dirty and clean up your kitchen after
a day out?
Why not bake some potatoes with garlic and herbs?
This is a healthy dinner for light consumers, quite
filling and goes well with mayonnaise or salad
dressing.
Wash the potato skin thoroughly.
Do not peel off the skin because most of the vitamin
s and minerals are embedded in the potato skin.
Cut into halves, boil in hot water until soften.
Coat the potatoes with fried chopped garlic, sprinkle
some herbs powder such as parsley, oregano and
5 spiced powder.
Bake in oven for 15 minutes until crisp
A great, healthy dinner for the whole family in
just 20 minutes of less, easy peasy!

We love fried rice but we usually have in the morning for breakfast and not for dinner. I think these are good ideas for me but not for dinner but preparing it for the children before going to school.
