That looks so delicious! I don’t think we can get fresh bay leaves here, but you made me wonder if maybe a dried one could be soaked to make it pliable. Otherwise, I suppose I would substitute a large basil or oregano leaf, or maybe some spinach or kale.
I never would have thought to grill cucumber, which we always eat raw. I thought from the picture that it was zucchini you’d used!
