Vegetarian Recipe: Fried Brown Rice with Medlar Seeds

\ Since my dad had high blood pressure, he had changed his eating habits drastically.

 

Although he has not turned himself into a full vegetarian, he had tried several vegetarian food which were helpful and beneficial to lower his high blood pressure.

 

He had adjusted his eating habits into healthy foods, such as  white rice to brown rice, from white bread to wholewheat bread, from pasta to wheat pasta and many more.

 

 

I am glad and happy for him because he had been living an unhealthy lifestyle for decades.

 

It is fortunate and unfortunate that because of his illness that had made him to live a healthier lifestyle and eating habits which benefited him in general well being.

 

Brown rice not easy to cook

One thing for sure, brown rice isn’t easy to cook.

 

He said that he needed to soak the brown rice 3 hours before cooking time.

 

Furthermore, brown rice soak up more water than white rice, at least 2.5 cups

 

Brown rice needs more than 1 hour of cooking.

 

Initially it was difficult to incorporate brown rice with his daily meals.

 

It taste raw , bland, chewy bites and he feels fuller after one small bowl of brown rice.

 

Sometimes, he couldn’t finish the brown rice if my brother isn’t home for dinner or when my sick mother eats less.

 

Hence, he had thought of turning the overnight brown rice into Fried Brown Rice with Medlar Seeds

 

This is indeed a unique Fried Rice that I had never tasted in my life.

 

 

How to prepare Fried Brown Rice with Medlar Seeds

Rice- Make sure that the left over brown rice is not sticky or wet. It should be dry and brittle.

Approximately 1-2 rice bowl of brown rice should suffice for 2 persons.

Brown rice helps to lower cholesterol, benefits heart, reduce cardiovascular diseases.

 

Medlar Seeds- Also known as Wolfberries or Goji

Small red seeds that are sold in supermarket under the herbs, beans or seasoning powder department. ( picture shown below)

Soak 1 tbsp of Medlar seeds into water to induce the size and soften them.

For the remainder seeds, store in air tight jar, in the fridge.

Medlar seeds are high in fibre, induce fluid to colons , helps to promote regular bowel motions, extremely low in sugar which is suitable for diabetic consumers.

 

 

Corns- Baby sweet corns or corn cobs or corn kernels from the can.

Discard the water from the can, reserve the corn kernels for stir fries.

For sweet corns, remove the leaves, wash and chop into small sections.

Corns are packed with fibre, helps to reduce constipation especially old folks.

 

 

Egg- Crack 1 Grade A egg and beat it.

Egg gives protein in this rice meal.

 

 

Fried Brown Rice with Medlar Seeds

Ingredients

  • 150g  overnight brown rice ( roughly 1 bowl )
  • 1 egg Grade A – beaten
  • 30g medlar seeds ( 1 tbsp )
  • 3 baby sweet corn / corn kernels- 2 tbsp
  • 200ml water ( 2 cups )

 

Seasoning

  • 1/2 tsp vegetable stock or granules
  • salt and pepper to taste
  • 1 tsp light soy sauce

 

Cooking Steps for Vegetarian Recipe: Fried Brown Rice with Medlar Seeds

  1. Heat up wok with 2 tbsp canola oil
  2. Saute corns, medlar seeds until aromatic.
  3. Make a hole in the centre, pour in beaten egg, scramble it.
  4. Add in overnight brown rice, ,loosen the rice, mix well with the rest of the ingredients.
  5. Add in seasoning, toss and turn again.
  6. Sprinkle pepper and stir fry for the last time before turning off heat.
  7. Serve hot with vegetable side dishes such as Bok choy, Snow Peas or Mustard Greens.

Yield: 2 persons

Ready in : 15 minutes

    • Medlar seeds is new to me. Must search on the Net to get more details. Brown rice is a staple in our household. We pressure cook the rice. I have never tried brown rice for other than eating it with curries. Must try out what you have suggested with something else as medlar seeds are not available here.
