Vegetarian Recipe: Grilled Vegetable Kebabs with Lemon and Garlic

You don’t have to turn yourself into a vegetarian in 

order to taste vegetarian meals.

 

Whether you are a dedicated vegetarian or a meat lover,

 you can cook tasty and delicious meatless recipes online 

or recipe books in book shops.

 

Honestly in my opinion, vegetarian recipes are not

 difficult to cook.

 

Many people had mistaken that vegetarian meals are

 time consuming which is not.

These meatless recipes are quick and simple to cook for 

any occasion and even for daily meals.

 

I finally found out what was the secret key to a 

successful vegetarian meal, less ingredients means

 little preparation.

 

The whole process of cooking a vegetarian dish is not 

as complicating as anything else because you don’t

 have to chop or mince meat which takes a longer time.

 

Sometimes, I found that vegetarian recipes are simpler 

and tastier.

 

Grilled kebabs don’t have to be chicken wings or 

seafood.

 

Grilled vegetable kebabs tasted as good as the meaty 

counterparts and they are healthier.

 

This recipe, Grilled Vegetable Kebabs with Lemon and 

Garlic consist of fresh cucumbers, tomatoes, corn on 

the cobs which are packed with fibre.

 

For protein, tofu and button mushrooms fit in perfectly 

for weight watchers.

 

I love this vegetable kebabs as this simple recipe is 

packed with vitamins and fibre which are essential for

 my family’s daily diet.

Grilled vegetable kebabs with lemon and garlic

 

Serves : 4 person

 

1 corn on the cob, peeled and washed

1 block of firm tofu~cut into cubes

Some bay leaves

1 cucumber~cut into chunks

1 canned of button mushrooms, washed and drain

4 baby cherry tomatoes

1 clove garlic~crushed

1 lemon juice, grated zest

2 tbsp olive oil

Salt and pepper to taste

1 cup of white rice~cook as usual

4 kebab sticks

 

Instructions

  1. Bring a soup pot to boil with salt, chop the corn on

 the cob into 8 sections.

2. Dump them into the boiling water. 

3. Allow to boil for 20min until cooked and soften. 

4. Use a fork to poke into the corn kernels.

5. Now, wrap each tofu cube with bay leaf.

6. With a kebab stick, poke through a corn, a tofu,

 a cherry tomato, a cucumber, a button mushroom, 

a tofu, a cucumber and lastly, a corn.

7. In a small bowl, combine crushed garlic with lemon 

juice and zest plus olive oil. Mix them well.

8. Arrange the kebabs in a shallow plate, drizzle the

 garlic lemon marinade over all of them.

9. Keep turning the kebabs in order to allow the 

marinade sauce to coat the ingredients well.

10. Set aside for 10min.

11. Preheat oven grill.

12. Arrange kebabs on the grill pan.

13. Brush the marinade again and grill for 10~20min.

14. Serve each person with one stick of grilled vegetable

 kebab with cooked white rice and a simple cool salad .

 

Tips

 

If the above recipe vegetables are not your cup of tea,

 you could replace them with :

 

Baby carrots

Baby potatoes

Cauliflower

Broccoli

Parsnips

Lettuce leaves

 

If you are not a big fan of garlic or lemon, grate some 

cheddar cheese and drizzle over the top of the kebabs,

 turn over at interval time and drizzle again at different 

portion.

    • That looks so delicious! I don't think we can get fresh bay leaves here, but you made me wonder if maybe a dried one could be soaked to make it pliable. Otherwise, I suppose I would substitute a large basil or oregano leaf, or maybe some spinach or kale.

      I never would have thought to grill cucumber, which we always eat raw. I thought from the picture that it was zucchini you'd used!

      yes, very delicious, I never thought that vegetarian kebabs are that delicious as meaty kebabs.

      Yes, you can use large basil or oregano.
      I don't have both, I would use lettuce leaves instead.
      You can sprinkle dried bay leaves powder, sprinkle on top while grilling.
