Traditional dishes

Each country and State can boast of dishes that traditionally belong to them. 

We have such traditional dishes and the jack fruit delight is one such. 

It is around this time of year that we get jackfruits ready to be plucked and waiting to be used in many dishes. 

There is never a single year that we do not make this dish. 

The ripe jackfruit is split open and the segments cleaned and seeds removed. 

It is then ground with jaggery and boiled rice. The batter should be thick enough to be spread on leaves that are typically used for this dish. 

The batter is spread on leaves around half inch think. The spread is then filled with a coconut and jaggery mix and then the leaf is tightly and firmly closed. 

Water is boiled in a steamer and the stuff placed in thre and steamed till the stuff is done. They are traditionally called ‘patoli’ Once cooled the leaf is removed and it is cut into pieces.  The most important watch out here is that the batter should just right neither too thin or too thick as it is this that gives the parole a good shape.l

This traditional recipe has come down from generations I learnt it from my mother who must have learnt from her elders. 

In this modern world however today’s generation has not taken up to making traditional dishes and that is sad news. Nor do they have any inclination to wanting to eat these traditional dishes. 

In this fast food world soon many of these exotic dishes will see their end and one wonders how to revive them unless fast food chains introduce them in their product line. 

Today’s youngsters are more into what’s in Since fast food is in,with  this idea of introducing traditional items in the product line of fast food chains these items could be given a new lease of life.
