THE INGREDIENT WHICH MAKES BIRYANI A HEALTHY FOOD ITEM

I am a favorite of Biryani. I could really enjoy the taste of this food item for the first time in the year 1983, December,  when my sister prepared it at home with the active guidance and directions of Mr. Bhavani who is an expert in its preparation.

Prior to that, in the marriage reception of the same sister in the year 1983, I tasted it when Mr. Murthy, the famous caterer of Hyderabad prepared it with Baguira Baingan being a side dish for it. It was only a conventional eating as I was busy receiving guests and inquiring about the arrangements though I was enjoying its taste. By the time I sat down for this dish there was nothing remained.  It became my desire to taste it once again and expressed my desire to having it. She was not aware of its preparation. But, got a good idea of the person who can make it perfectly and contacted Mr. Bhavani to teach her to prepare the dish. He gladly accepted and was present in minutes.

I was observing it casually but was eager to have it and the more it was releasing beautiful flavors in the kitchen the more I was experiencing mouth-watering.

Sister also prepared Aloo mutter and curd chutney as side dishes.

 

After my brother-in-law entered the house he was very hungry and sister was ready to serve the dish after he came out of his prayer room.

We three sat together and started the dinner.  The Biryani was prepared very excellently. My brother-law was cautioning me that it causes heat in the body and one will have thirst if consumed in more quantity. I was already experiencing it.

Coming to the ingredients used in the preparation were:

1.Bay leaf

2.Funnel seeds

3.Star Anise

4.green cardamom

5. black cardamom

6. 2 inch Cinnamon sticks

7.Cardamom

8.Coriander seeds

9 Shahi jeera

10. grated nutmeg

11. Cloves

12.stone flowers

Coming to the ingredients used in the preparation were:

1.Bay leaf

  2. 2 inch Cinnamon sticks

7.Cardamom

8.Coriander seeds

9 Shahi jeera

  1. grated nutmeg
  2. Cloves

I analyzed each and every ingredient subsequently and thought that it is a rich diet only because of using THE BASMATI RICE that makes it quite nice and gives it a good look and later I came to know that it is the ingredients that give it a rich flavor. But, that there is only one ingredient ie., Cinnamon (Dalchini)  that makes it quite a healthy diet as the ingredients itself is loaded with qualities that provide good health.

Cinnamon is the only natural ingredient that provides the eater with all necessary nutrients, keeps people nourished.

The polyphenol, an antioxidant is present only in 24 ingredients and it is richly found in Cinnamon and even the Garlic which is supposed to be a good ingredient of having this anti-oxidant becomes the second one in this aspect when compared to Cinnamon. This property also makes Cinnamon a good preservative. The anti-inflammatory property of Cinnamon makes it a number one ingredient in fighting diseases.

Keeping Diabetes under control and providing good cholesterol in the body is another good property of any ingredients and it can be achieved by Cinnamon and on account of which it protects the eater from the risk of heart diseases. The property of arresting the entry of Glucose in the body and the compound which is present in Cinnamon acting as a substitute for Insulin make Cinnamon great ingredients in lowering blood sugar level.

Whatever may be the type of Biryani viz., Chicken Biryani, Mutton Biryani, Vegetable Biryani, using sufficient quantity of Cinnamon make it a very healthy diet.

    • I have never tried Biryani but I know I would like it because of the ingredients; especially cinnamon.

    • I tried Arabic biriani and its super tasty really you feel there lots of tastes are and there are rich of every taste at the same time, I like it with ham not chicken and I like it with red rice. I guess each country make it in different way and some name it different way, in general i love to eat salty things alone, do not like to mix the sweet taste with the salty taste, like checken with pinapple or here adding cinamon to the biriani, i like your recipe, going to try it with out sweety taste with it, these are good healthy items for sure and I will love to add it to Biriani, but do you have different way for biriani too, is so please post it in here as i like to learn new recipes everyday from the worl wide here and there, Thanks for the well written post and full of detiales still simple and easy to follow at cooking at home at any second

    • It sounds tasty, but I have never tried Biryani as you described here. What country's cuisine it is? It is great that we can try different cuisines. It's enough to search online or watch Youtube and we can prepare very interesting new dishes. Thanks for sharing.
