Th Magic of Coconut Milk

As a vegetarian I don’t like going to ‘All Inclusives’.   All Inclusive means the payment for food is covered by your bill.   It doesn’t make a difference if you eat one meal a day or eat all day.   It’s in the Bill.

I have been to All Inclusive before and found that the food is… not good.   Oh, in many places it’s okay, nothing to exclaim about. But when you don’t eat meat you’re on a diet.

Anyway, I was in Runaway Bay.  I was to spend a week, so  I marched to the Chef, introduced myself, told him of my diet.   He smiled and said, “Don’t Worry about anything, you’ll always have food to eat.”

He kept his word.

The Chef did not just make me non-meat meals, he made delicious meals.

Okay, what’s the secret?

Coconut Milk.

He would boil corn in Coconut Milk.  He would soak various items in coconut milk. He would use it to make peanut porridge.   In short, anything that needed water, he used coconut milk.

It is simple, it’s easy, and it makes food taste fantastic.  Even boring things,  things you use as filler on a plate, once cooked in coconut milk, they are fantastic.

If you eat fish, soaking it in coconut milk before cooking makes it a gourmet dish.

I am lucky, for not only do we have coconut here, but we make a special powdered coconut milk which is so convenient.

For those who don’t know, to make coconut milk you have to grater a coconut and let it sit in water, then squeeze the bits of coconut and feed that to the chickens.  The milk is ready to go, unless you want to make coconut oil, as I mentioned in an early article.

Of course this is a lot of work, but if you have the powder, you’re done.

I use it instead of ‘creamer’ in my coffee.   I use it instead of cow’s milk on my cereal. It’s much nicer than those soy things.
