I always avoid roasted or fried foods during summers therefore I am sticking to my fruit salads and soups during my lunch. I am a great fan of vegetables marinated with small quantity of spices but that is possible only if I am cooking them at home because most of the varieties available in restaurants are highly spiced.
I am not a great foodie but I have to eat out often with my clients and trainee professionals. I have not much choice when I go for lunch with my clients but I prefer eating light when my juniors are with me. For instance I avoid anything high on calories, fat or protein but prefer soups or salads for my lunch.
However, if insisted or I want to try something different from my usual salad I eat a couple of chapatti and yellow lentils minus the usual ghee or butter. I suggest you should try Chinese soups which are mainly oil-free and the best part of their preparation is most of these soups are spice free too.
I have made it my habit to order salads and soups whenever I am out on tour that I feel is good for my digestive system as well on my over all well-being. Despite being a Punjabi I have been a vegetarian by choice for over a decade but I no more feel I am missing my favorite chicken dishes or tikkas (minced spicy backed meat).
I have certain other suggestions if you are too hungry or want to eat more solid food minus fat and protein then go for South Indian foods like Plain Dosa, Idlee, Utapam,bada etc. or go for plain good rice with curd and light Sambhar made of vegetables and pulses. Drink plenty of water and other liquids which is a guarantee of your healthy summers.

@suny I am not much into salads which I should really add in my diet but those South Indian items that you have listed in your blog are regulars in our cuisine here in our household.
I agree the south Indian food is one of the best which I learned during my long stay in Bangalore.
Punjabi food is rich in calories. Being a Punjabi, I am a foodie but I turned vegetarian in 2008. I love South Indian cuisine and we often make idlis and dosas at home. I am not very particular about diet especially when I eat out and I make up for it by keeping fasts on Ekadashi.
I am a no good judge as far as healthy foods for summer are concerned. My best chef cook is the one who prepares them and she knows what is good for our family, and my favorite of course. I bow my head to my beloved wife who does all the cooking for our family. I am very sorry that I don't know how to cook,but I am a good even not the best food tester.
What my wife usually cooked for us last summer was a soup of leafy vegetable with a ground beef. I remember I couldn't resist its delicious taste. I sipped more soup and ate less rice. Banana is always present every time we eat.
By the way, my wife is not only a good cook but also a conscientious planner and budget conscious. I just give her the money and she does everything to make us full and satisfied of eating healthy, nutritious foods for our body.
It is a fact that Indian curry is best if is made properly with all ingredients peacefully. I cook my self white lentil with desi ghee and eat it you will enjoy its taste till several days.
Salad of fruits and salad of vegetables both are most important for our health. The soup of beef is very tasty in cooking and keep warm our blood temperature warm 24 hours.
O eat more meat and less vegetables because I do not like vegetables but meat of beef friend or roasted.
