Strawberry Curd Cheesecake You Can’t Miss

This is cheesecake that you should not missed!

 

I bought a slice of Walnut Cheesecake at the Starbucks Cafe and it was simply delicious!

 

However, I couldn’t find the exact recipe of this cheesecake online but I guess that Strawberry Curd Cheesecake sounds almost alike this cake that I had tasted.

 

Hence, I decided to make myself a homemade Curd Cheesecake because store bought cheesecake is REALLY EXPENSIVE when you order a slice of it.

 

Do you know one slice of cheesecake costed $12 ?!

 

I could buy a pack of curd cheese and other ingredients to make a wholesome Curd cheesecake that I could eat for days!

 

This Strawberry Curd Cheesecake has a semi-sweet and sourish flavor with a soft creamy cheese texture that deliciously wiped off my feet!

 

It in sinfully extremely rich in curd cheese, so heavenly yet with a tangy sourish flavor from the lemon juice and zest.

 

I don’t mind the mild sourish flavor because too much cheese flavor would bore your taste bud easily. You will get sick and tired of the same cheesey taste , right?

 

Although some cheese cake has whip cream toppings, but mine is splashed with melted chocolate spread and served with pureed fresh strawberry for a mixture of sweet and chocolatey flavor.

 

In addition, I had added toasted ground almonds to my curd cheesecake, that gives the cake a wonderful aroma of almond.

 

Once you had baked the cheesecake, remember to chill the whole cake in the frdige for a few hours or overnight before consume.

 

Curd cheesecake or any regular cheesecake should be chilled in order for the flavor to blend well into the texture of the cake.

 

In addition, you should keep the cheesecake covered with a plastic cake container in order to prevent the other odor from the fridge from penetrating into the cake.

 

Curd Cheesecake Recipe

 

Ingredients:

  • 55g unsalted butter- soften
  • 130g icing sugar
  • 250g curd cheese- sieved
  • 2 eggs- separate the yolks from the whites
  • 55g toasted ground almonds
  • 1 lemon- squeeze out the juice, grate the lemon zest
  • 55f semolina
  • Melted baking chocolate
  • Some fresh strawberries-chopped and pureed

 

How to prepare:

 

  • Preheat oven to 180C
  • Grease the cake tin
  • In a mixing bowl, cream butter, icing sugar and curd cheese until soft and creamy.
  • Beat in egg yolks into the batter.
  • Then, fold in the toasted almonds, semolina , lemon juice and lemon zest.
  • In another bowl, whisk the egg whites until stiff.
  • Then, fold in the cheese mixture.
  • Mix until all ingredients are well combined.
  • Turn the cheesecake batter into the prepared cake tin.
  • Bake in the oven for 45min, until golden brown.
  • Cool the cake in the tin for 20min.
  • Turn it out, spread melted chocolate over the surface.
  • Allow it to set.
  • Cut the cheese cake into 6 slices.
  • Chill in the fridge before serving.
  • Before serve your guest, place a scoop of pureed strawberry on top of the cake.

 

Makes around 6 slices
