Honestly, I love all those easy to prepare
Chinese recipes, especially anything that is
related to mushrooms.
Straw mushrooms, Enoki mushrooms,
Button Mushrooms or Chinese Black
mushrooms are my favorites!
My mother-in-law is good at cooking
Straw Mushrooms with Prawns but since she
is illiterate ( over 85 years old lady), she
couldn’t provide me the exact measurements
for each ingredients.
All she said was “ Use your instinct and
guess the proportion according to your
experience”.
Well, that leaves me no choice but to keep
trying to cook this mushroom recipe a few
trials and errors before I could catch the ball
.
The first time I tried cooking the mushrooms,
they were not cooked thoroughly and the
carrots tasted raw enough for rabbits to like
them.
Later I had realized that it will take a longer
time to cook the mushrooms and carrot if I
leave the wok open.
Closing the wok with the lid ( wok cover)
helps the ingredients to heat up and cook
faster in minutes.
In addition, if the ingredients are too dry, it
is best to pour in approximately 1/4 cup of
water in order to simmer the mushrooms
and carrots.
Snow peas are best to peel off the strings
before you cook them.
Otherwise, they will taste raw and hard to
chew / digest as if you are eating grass.
By nature, snow peas are as sweet as carrots
which make a great combination with this
straw mushroom recipe.
Straw mushrooms are delicate, soft and
easily chew compare to Chinese black
mushrooms and button mushrooms.
That is the reason why I chose straw
mushrooms, suitable for my kids who are
picky on hard to chew food.
As for the tiger prawns, you can choose large
prawns or shrimps, whichever that are
available or convenient to you.
Remove the prawn’s heads but the tails are
optional.
Some people prefer to hold onto the tail of
the prawns while eating because it gives the
extra seafood flavor.
Some wet market or hypermarket do not sell
fresh prawns unless you could wake up early
in the morning, do your prawn shopping as
early as 7am.
That is the best time to choose fresh looking
prawns or shrimps which are brought in
from the market.
Early bird catches the worm
If you dislike prawns, you could replace it
with chicken fillets, liver, pork fillets, beef
strips or ham.
If you want mushroom recipe to be pure
vegetarian recipe, leave out the meats,
replace with oyster mushroom, tofu cubes or
mocked meats, whichever you prefer.
l 1 packet straw mushrooms-briefly washed,
cut into halves
l 300g tiger prawns or shrimps- deveined,
remove heads and tails, marinate with a
pinch of salt
l 1 small carrot- peeled and sliced thinly
l 12 snow peas
l 2 clove garlic-chopped
l 2 shallots-chopped
l 1 tbsp oyster sauce
l 1 tsp soy sauce
l 1 tbsp Chinese wine ( cooking wine )
1. Heat up wok with 2 tbsp of oil.
2. Saute garlic and onions until aromatic.
3. Add in mushrooms, carrots and snow peas
, stir fry for 3 minutes.
4. Add in tiger prawns, stir fry until turned
pinkish
5. Add in all seasoning plus a little water if it
is too dry.
6. Cover the wok with a lid.
7. After 2 minutes, give another stir, add a
dash of pepper, turn off heat.
8. Serve hot with white / brown rice or hot
porridge.
Yield: 3 persons

The very combination of mushroom and prawns is appetising enough and looking at your image my mouth started watering. Tiger prawns are very expensive and also they are not available on call.
