There was a big discount on the Snow peas at Tesco
yesterday.
I bet that the snow peas season are out now.
There were a group of aunties grabbing a few
packets of snow peas and I finally understood why.
They were so fresh, crisp and bright dark green in
color.
The pea pods were not bulky, just thin and tiny
pods.
I bought 5 packets because I decided to Stir Fry
Snow Peas with Black Fungus today.
My mother in law had brought a bag of dried black
fungus which she had bought from the night market.
She told me that black fungus is much healthier
than button mushrooms and goes well with snow
peas.
Hence, I decided to follow her advice since she “ate
more grass” than me.
“Ate more grass” is a Chinese proverb that means
had more experience than me.
If you are a vegetarian, this snow peas recipe is just
right for you and your family.
If you are a meat eater, toss in a few slices of pork,
beef or chicken fillets into the snow peas with black
fungus to add more flavor.
First and foremost, soak the snow peas
into a bowl of water to remove any pesticides, dirt,
whatever on them.
Then, remove the string off the snow peas right
from the tip, just pull along to the bottom slowly.
If you pull too fast , it will break off halfway.
Those strings if not removed, you will find that you
are chewing raw grass instead of snow peas.
When choosing snow peas, remember to choose
thin, bright dark green in color.
Avoid those fat, bulky snow peas with bulging pea
pods.
Green yellowish color and dry, flimsy snow peas
should be avoided.
It is sold dried and curly shape.
It is actually the fungus grow on the bark of the tree
like “ears” that tasted alike chewy jelly or squids.
These fungus are considered an expensive
ingredients but pack with more nutritions compare
to button mushrooms and shitake mushrooms.
Black fungus needed to be soaked in a bowl of hot
water in order to soften them.
Then cut the black fungus into strips or any shape
you desire.
I prefer to cut them into bite pieces for more chewy
bites.
Meats- This is an optional ingredient. If you are a
vegetarian leave this ingredient out.
If you are a meat lover, you could add in strips of
slices of lean pork, beef or chicken fillets into this
vegetable dish.
I prefer pork, lean pork with no fats that added
more flavor into this dish.
Packed with more proteins and energy for my kids.
2 cloves garlic-chopped
1 packet of snow peas- washed, remove strings
2 pieces of dried black fungus- soaked in hot water,
cut
200g of lean pork- cut into thin slices
A little corn flour to coat the pork
Seasoning
1 tbsp of oyster sauce
1 tbsp of light soy sauce
1 tsp Chinese wine
1 tsp corn flour mix with 2 tbsp of water solution
1. Marinate pork with 1 tsp light soy sauce, 1 tsp
corn flour and a few dashes of black pepper. Set
aside.
2. Bring wok to heat with 2 tbsp oil.
3. Saute garlic until fragrant.
4. Add in marinate pork slices, stir fry for a couple of
minutes to semi cook the pork
5. Add in snow peas and fungus, stir fry a few times.
6. Pour in a little water if the dish is too dry.
7. Add in the seasoning, stir fry until all ingredients
are well combined.
8. Simmer until the pork is cooked.
9. Dish up and serve hot
Yield: 2-3 persons

This looks interesting, although I admit I'm kind of leery about the "black fungus" portion of the recipe, lol. I like the look of the snow peas. I buy these types of peas often and eat them as a snack when they are cold and fresh, but they look like they will taste good stir-fried. I'd add chicken to this recipe, like you suggested for meat lovers.
