Have you tried consuming bitter gourd ?

 

Most of us would have goose bumps upon hearing the word Bitter gourd.

As the vegetable name lived up to its name, the green wrinkled oblong shaped Bitter gourd is indeed BITTER to the core.

However, do not be put off the bitter taste because bitter gourd is widely  known for its nutritional value.

Chinese Beliefs 

Bitter gourd has a cooling property that helps to cool down your body

 temperature  during hot weather or summer.

In additional, bitter gourd helps to detoxify your liver, tossing out all the  toxin in your liver through urination.

You may smell bitter gourd smell in your urine for the first 2 days. 

This is the normal effect and good news. 

You have filtered your kidney.

How to choose a perfect bitter gourd

  1. My mom in law used to tell me that you should pick wide ridges that would lessen the bitter taste.
  2. Choose light green not dark green colored bitter gourd

How to reduce the bitter taste

Now, I am good at this!

  1. Cut bitter gourd into halves.
  2. Use a spoon to scoop out the seeds ( red and yellowish skin) plus the white pulp.
  3. Slice the bitter gourd as thinly as possible.
  4. Transfer them into a bowl, toss in 1 tbsp of salt.
  5. Mix them well and leave aside for 2 hours.
  6. You will see green water surface at the bottom of the bowl.
  7. Squeeze out the slices of bitter gourd in your palm.
  8. Squeeze out as much juice as possible.
  9. Bitter gourd juice tasted really bitter. Discard it.
  10. Bring a pot of water to boil.
  11. Toss in the bitter gourd slices. 
  12. Allow them to boil until turned pale green color and softened.
  13. Drain them and soak into a bowl of tap water.
  14. By now, the bitter gourd are cooked and tasted better, less bitter.

 

 

Stir Fry Bitter gourd with Chicken Fillets

  • 1 clove garlic
  • 2 shallots
  • 3 slices of ginger
  • 200g Strips of chicken tender fillets( breast or keel )
  • 1/4 carrot- peeled and cut into strips or slices
  • 1 egg- beaten

 

Seasoning: ( mix together in a small bowl )

  • 1 tsp of salted soy bean paste – mashed

  • 1 tsp of light soy sauce
  • 1 tsp oyster sauce

Method of cooking:

  • Boil bitter gourd as I had mentioned above in order to reduce the  bitter taste.

  • Heat up wok with 1 tbsp of oil.
  • Saute ginger, chopped onion and garlic until fragrant.

 

 

Stir frying chicken, carrots, chicken fillets together- taken by peachpurple

  • Toss in chicken strips, stir fry for a few minutes
  • Add in the carrot strips, stir fry for another few minutes.
  • Make sure that the chicken strips are cooked.
  • Toss in the pre-cooked bitter gourd slices.
  • Mix all the ingredients well.

  • Lastly, add in the 3 seasoning. Stir well. 
  • Ensure that all ingredients are coated with the seasoning.
  • If it is too dry, add a 1/4 bowl of water.
  • Simmer until the sauce thicken and reduced.

 

  • Dish up, serve hot with white / brown rice or porridge.

Results:

My teenager and hubby loved this dish. 

They said that the bitter gourd didn’t taste bitter at all.

 I was relieved to hear that. 

Otherwise, I would have to finish up the whole bitter gourd dish by myself !

 

Tips:

  • Sliced thinly, not thickly.
  • Soak bitter gourd a night before hand to allow the bitter juice to  produce with the salt seasoning

 

Optional:

  • If you are a vegetarian, replace chicken with button mushrooms.
  • Replace oyster sauce with vegetarian sauce

    • Thanks for sharing this recipe and tips for preparing the dish. When I saw the picture and topic, I was thinking this is really like the dish we usually have at home, and then it's from you, that's why! :D

      My mom taught me to use salt to "wash" the bitter gourd in order to reduce the bitterness as well, but my husband and I like the bitter taste, so I don't do that. So it becomes much easier for me to prepare this dish. My two young children do not like this at all. Perhaps they might like it when they grow older. I didn't like to eat bitter gourd at all when I was young too, I started to eat because of it's good for health and my husband likes it, and now I just like it very much!

      Thank you for sharing the rest of the recipes here as well. I am going to check them out soon. I am not a good cook, but just always cook some simple dishes at home. :)

    • Interesting...wonder whether dandelion roots and/or old greens would add enough bitter flavor to make this recipe work with zucchini?

    • I like the way my mother cooked bitter gourd. I haven't asked about the secret how it tastes less bitter. I am going to share this recipe to her. Thanks for sharing it.

    • My mom cooks this vegetable a lot. When I was in grade school, she prepares sautéd bitter gourd with egg and I love it! After slicing the bitter gourd, she will mix it with salt and squeeze it to lessen the bitter taste. You should prepare this dish to your kids because its nutritious unlike frozen products that contains some chemicals that are bad to their health or worse, cancerous products.
