Looking for an easy to prepare vegetable recipe that is healthy and quick to cook?
Well, you have to come to the right post for today, I had just cooked a plate of Bean Sprouts with Tofu Cubes that makes a delicious complimentary side dish for porridge ( or congee ).
Locally, bean sprouts are fondly known as “tau geh” which is Malay and Chinese dialect.
You can buy loose bean sprouts in the hypermarket where you can choose the fresh tau geh without the black pea shells.
A bag of bean sprouts cost 50cents which could yield 3-4 persons per meal.
However, I would divide is bag of bean sprouts into 2 plates, 2 meals instead of one.
Even my kids know that bean sprouts are grown from green peas or mung beans.
Science teacher often conduct bean sprouts project with pupils at school in order for them to learn that living things required sun, air and water to survive.
Hence, my son had realized that bean sprouts were those few mung beans planted into wet cotton balls, growing each day beautifully with little sprouts forming from the beans.
However in the market, the farmers grow bean sprouts in large basin or containers where they stack one basin on top of another.
This delicious and refreshing vegetable dish goes well with any combination ingredients.
You can try mixing bean sprouts with:
– firm tofu
– salted fish
-dried prwns
-fresh shrimps
-chicken or pork fillets
-crispy garlic
-chopped sprng onions or chives
It is wise to cook the bean sprouts after you brought back from the hypermarket.
Storing the sprouts in the plastic bag will induce droplets of water in the bag when you chill them in the fridge.
Hence, these sprouts will turn soft, moldy , doesn’t taste crisp and refreshing.
In addition, you cannot reheat cooked bean sprouts because the color turns brownish and murky.
– remove the black pea shells from the bean sprouts
– pluck off the tiny roots from the sprouts
– do not remove the sprouts head ( yellow buds)
-briefly wash the plucked bean sprouts under tap water
– do not soak them
1/2 bag of bean sprouts- remove tails ( roots)
– 1 block of firm tofu- cut into cubes
– 4 blades of chives (optional)-cut into sections
– 1 small piece of salted fish- chopped finely ( don’t wash)
– 2 clove garlic-chopped
-1 tbsp light soy sauce and pepper
Too much gravy makes the bean sprouts limp.
Hence, don’t pour in too much water.
