Steamed Chicken with Black Fungus

I had posted quite a number of Chinese recipes here at LiteracyBase and Hubpages, which I am sure you had enjoyed trying them out.

 

Among the chicken recipes I had cooked, this Steamed Chicken with Mushroom & Black Fungus was the BEST and easiest to prepare.

My mom used to steam this chicken recipe often when my brother and I grew up in our low cost home.

Mom disliked to cook several dishes for a simple dinner of four.

Hence, she often looked out for quick and easy recipes, get it cooked fast so that she could dance to her favorite music.

( My mom loves to dance while she turn on the radio)

 

What is Steamed Chicken with Mushroom & Black Fungus

I remembered mom used to call this “Steam Chicken” and never get bored of eating the same chicken dish 2-3 times a week.

That is because she had the talent to mix the seasoning which I am glad to had learned a trick or two from her.

It is a chicken recipe that is braised with black fungus, spring onions and wonderful seasoning thicken with corn starch.

An all-in-1 chicken stew for main course dish, very popular in Chinese restaurants and a great excuse to skip off the side dish!

Main Ingredients you need to prepare

#1 -Chicken

  •  Mix all sauces together with corn starch to thicken it.
  • Choose chicken wings or drumsticks instead of other chicken parts.
  • Remove the fats of the chicken to reduce the oiliness in the dish. ( Otherwise you can see a surface of oil on top after steamed)
  • If you prefer a healthier version, remove any excess chicken skin ( you don’t have to remove all the skin)

#2- Black fungus

  • Black fungus is a black jelly type fungus ( mushroom), grown on rotting branches, decaying logs or stumps of trees.
  • Dark brown-nearly black in color.
  • Wavy, curly shape.
  • In Chinese it is called “Yin Er” or “Mao Mu Er”because these fungus looked alike the ears of the tree
  • Usually dried before sold , expensive and cooked in Chinese cuisine for festive seasons.
  • This mushroom is often referred as “Black Treasure”
  • Soak them in a bowl of hot boiling water to soften them.
  • Cut into bite pieces or shreds, depending on your recipe requirement.
  • Taste bland but a great combination of stir fry vegetable recipes and meat stews.
  • Gives a crunchy bites and slippery to touch.

 

How to cook Steamed Chicken with Black Fungus

Ingredients

  • 3-4 pieces of chicken wings- cut into halves
  • 3 Chinese mushrooms-soaked in hot water
  • 5 Black Fungus-soaked in hot water
  • 1 stalk spring onions
  • 3 slices ginger

 

Marinate sauces

  • 2 tbsp of oyster sauce
  • 1 tsp corn starch
  • 1 tbsp sesame oil
  • 1tbsp light soy sauce
  • pepper

 

Cooking steps

  • Bring a wok or steamer with water to boil.
  • In a shallow plate, season the chicken parts with the mixed sauces.
  • Cut the black mushrooms into thin slices.
  • Cut the black fungus into halves
  • Cut the spring onions into sections
  • Mix both mushrooms and ginger with the chicken parts.
  • Scatter spring onions on top.
  • Steam in the steamer for 20-30 minutes under medium heat
  • Sprinkle pepper before serve with white rice

Yield: 3 persons

    • We will do this kind of dish when there is extra of chicken meat left during an festive. We love to put some mushroom and black fungus as well. The back fungus is more low cost compared to mushroom nowadays.
      The black fungus and all the black things seem very good for health and rich of nutrient.

      It's nice to hear that your mum love dancing. Do you like to dance as well?

    • The sparkling look of the chicken said it is really a good one to taste. I have never tried steamed chicken because this is not the normal way we cook chicken. We cook chicken like roasting and friend and the popular adobo or cook in soy and vinegar. Steamed chicken seem a good one to try.
