Beef stew , one of the meat recipe that I had not cooked for
quite some time.
In the past, I had tried a curry beef recipe when I had
attended my classmate’s wedding dinner.
I could still remember the spicy , delicious meal that do not
give any strong beef odor at all.
Fortunately, I managed to request my friend to share with
me her secret on how to remove the strong beef odor which
I had failed.
She told me that in order to remove the strong beef odor,
you need to wash thoroughly and boil the beef in water mix
with cinnamon and salt.
I asked her why?
She doesn’t know either.
Her mom taught her to do so and she did.
Hence, she gave me this Spicy Beef Stew recipe and
guaranteed me that I would enjoy this beef stew as much as
chicken stew. It certainly did.
#350g beef steak, cut into chunks
# 3 medium potatoes, peeled and cut into quarters
# some cabbage-cut into slices
# 100g french beans, sliced diagonally
# 1 large onion, quarters
# 1 large carrot- peeled and cut into thick slices
# 1 tsp corn flour
# ½ tsp mustard seeds
# salt and pepper
# 1 stick cinnamon
# water
1. Fill in pot with ½ pot of water, bring to boil with beef
steak, cinnamon, salt and pepper.
2. Cook until beef is half cooked.
3. Add in carrots and potatoes, continue to cook until all
ingredients are tender.
4. Put in the cabbage, French beans and onions.
5. Simmer for another 10 minutes.
6. In a small rice bowl, blend in corn flour, mustard seeds
and pepper into a paste with little water.
7. Add the spicy paste into the beef stew.
8. Boil the stew under low fire until the beef is tender.
9. Serve hot with white rice or French loaf.
10. Yield: 4 persons
l Buy fresh beef early in the morning at the wet market or
supermarket.
l If the beef are pre-packed, make sure that the
beef juice does not drip off from the packaging.
l Smell the beef, it should smell as if freshly slaughtered.
Avoid foul smelling odor.
l Choose rich, bright cherry red color beef.
l Touch the beef. It should feel tender, bounce back when
you push the beef .
l Place beef into plastic bag, separate from vegetables or
other meat.
l Choose beef as the last ingredient before you head to the
cashier.
l Bring ice box or ice packs if you are planning to delay
your trip home.
l Keep the beef cold at all time.
l Cut the beef into individual large pieces before storing
them into the freezer.
l It is best to thaw individualize desired pieces instead of
the whole steak.
l Thaw beef at room temperate at least 1 hour before
cooking time.
l Do not soak the beef into water.
