Soaked Orange Sponge Cake

Baking had been one of my passion besides writing and cooking.

Any articles related to baking is my cup of tea, I would definitely read them 

for sure.

I love baking breads and cakes for my family and neighbors for FREE.

You don’t have to buy a cakemixer to make a cake batter.

Handmade cake by whisking, mixing and beating with your hands, equipped 

with a stainless steel fork or a whisk is all you need to make a wonderful, 

puffy, fluffy and spongy cake for breakfast or tea.

With a few fresh orange in the refrigerator, I had decided to squeeze out 

some fresh orange juice and used up the orange zest for today’s cake; 

Soaked Orange Sponge Cake.

 

Honestly, I am extremely happy with today’s cake result, spongy and

 beautifully splashed with orange color that had attracted my kids’ attention!

These slices of orange cake were gone during tea time, with a 

complementary of hot cocoa and mocha.

My kids truthfully enjoy eating this delicious cake when it is fresh taken out

of the rice cooker pot.

The lovely aroma of orange had filled our household from the kitchen to the 

living room.

 

Baking cake with a Rice Cooker

I sure am glad that my first try of baking this Soaked Orange Sponge Cake

 turned out well even though I had used a rice cooker instead of an oven.

Yes, you heard it right, I had used my Panasonic Rice cooker to bake this

 cake as you can read from my other cake posts.

It is extremely easy, just :

· mix the cake batter

· lightly grease the base of the pot with a little butter

· cut out a baking paper, place it on to the base of the pot

· pour the cake batter into the pot

· shake the pot 

· put into the rice cooker

· close the lid and press “COOK

That’s it!

How to bake Soaked Orange Sponge Cake

 

Makes: 12 slices

Prep time: 10 min

Baking time: 50 min

 

Ingredients

· 4oz butter

· 6 tbsp castor sugar

· 2 eggs Grade A-beaten

· 2 tsp grated orange zest ( the skin)

· 6oz self raising flour

 

For the syrup

· 2 fl oz  (60ml) orange juice

· 3 tsp icing sugar

 

Baking Steps

1. No need to preheat rice cooker.

2. Light grease the base of the inner rice cooker pot ( black pot) with a

 little butter

3. Cut out the base circle shape of the pot by placing it on top of the 

baking paper, draw a circle.

4. Place the baking paper into the base of the pot.

5. In a mixing bowl, beat butter with sugar until light and fluffy with a

 stainless steel fork.

6. Gradually, add in eggs a little at a time, beating well between each

 addition.

7. Stir in the grated orange zest.

8. Sift in the self raising flour and then beat the cake batter again.

9. The cake batter should turn creamy.

10. Transfer the cake batter into the cooker pot

11. Level the surface by shaking the pot. 

This will reduce the air bubbles too.

12. Place the pot into the rice cooker.

13. Press “COOK” which may take 50 minutes to bake your cake.

14. When the rice cooker light switch to “keep warm”, that means the

 cake is baked.

15. Open up , test the cake with a skewer or toothpick.

16. If it comes out clean, your cake is ready.

17. Otherwise, further bake by pressing “Quick Cook”

18. Turn the cake out by turning the pot upside down onto a flat plate.

 It should come out easily.

19. Poke the cake with a skewer or toothpick a dozen times on the

 surface.

20. This is to allow the orange juice to soak into the orange cake

21. Mix the orange juice and icing sugar together 

22. Spoon the mixture slowly over the baked orange cake .

23. Allow the juice to absorb into the cake.

24. Cut into 12 slices and serve hot.

    • Debated for a long time whether or not to buy a rice cooker. In the end, I got a slow cooker. It was on sale! Had no idea you could make a cake in a rice cooker. Now I'm rethinking and might just add rice cooker back to my holiday wish list again! :)

      • slow cooker is great for stew and soups, but for a cake, you need a rice cooker or an oven or microwave oven.
        I had used rice cooker since I need it for cooking rice too.
        No worries at all
