Seafood Chowder

Yesterday night, we had Seafood Chowder for dinner, 

along with Stir Fry Cauliflower & broccoli.

It has been a long time since we had this chowder dish,

 everyone missed this delicious and tasty filling soup.

 

Non dairy and non flour chowder

Most chowder recipes are thicken with flour and dairy

 ingredients but this is exceptional recipe.

It does contain cubes of potatoes , carrots and celery 

but it is dairy free.

I had used canned mushroom soup instead of flour 

thickening in order to enhance the seafood mushroom

 flavor.

 

All-in-1 Soup

My kids called it a All -in -1 Soup because it is

fulled with different types of vegetables and seafood

 ingredients which they loved very much.

The mushroom soup had delivered a wonderful creamy

 texture which was hot and awesome.

Ingredients Substitute

 

Sometimes, it is difficult to buy fresh squids and shrimps

 in the market.

You could replace them with squids balls ( alike fish balls)

 , frozen shrimps , frozen or canned scallops or clams,

 instead.

Refrain from using fish with many bones because your 

little ones might not be able to pick out the bones, unless

 you have to remove them before adding into the chowder

 dish.

Your best bet would be white fish cod, halibut , dory 

fish or salmon fish, less bones, more flesh.

Bread or Rice

This Seafood Chowder served best with white or 

wholewheat bread, plain muffins, French bread or pita 

bread for the Americans or Europeans.

However Asians prefer to have white rice which is our 

staple food.

Seafood Chowder is considered as a side dish because it 

belonged to the soup category for us.

Hence, main course dish has to be meaty dish or

 vegetable dish which I had chosen Stir Fry Cauliflower

 and Broccoli.

Benefits of Seafood Chowder

Seafood Chowder is extremely high in IRON, 

maganese, copper and zinc.

Fish contains Omega 3 Fatty acids which is vital for

 growing up children. 

In addition, these fats are UNSATURATED fats which 

increases insulin production in the pancreas. 

Hence, it reduces the contraction of DIABETES disease 

especially young and middle age consumers.

Low Cholesterol. 

It is non-dairy and uses corn oil. 

You could use canola or olive oil for healthier consumption

Seafood Chowder

Preparation time: 10 minutes

Cooking time: 10 minutes

Ready to serve time: 20 minutes

Yield: 4 persons

 

Ingredients:

2 tbsp corn oil

2 cloves garlic

180g onion, chopped

1 bay leaf

1/2 tsp dried oregano powder

3 medium potatoes, peeled and cubed

120g celery, sliced diagonally

100g carrot, peeled and diced

1 canned mushroom soup , add with water

100g shrimps, remove shells, head, retain tails

100g squids, cleaned and cut into rings

100g white flesh fish, cubes

100g crabmeat sticks, diced

 

Seasonings:

1 tbsp Anchovies granules ( I used Knorr brand)

Pepper to taste

Chopped spring onions

 

Method:

1. Heat up wok with oil.

2. Saute onion and garlic until fragrant.

3. Add in bay leaf, oregano, stir fry a few seconds.

4. Add in potato cubes, celery and carrots.

5. Quickly pour in diluted mushroom soup and bring to

 boil.

6. Keep stirring constantly in order to avoid burning the

 base. Keep low heat.

7. Add in all seafood and simmer for 10 minutes.

8. Add in seasoning, stir again.

9. Turn off heat when seafood are cooked.

10. Scoop up Seafood Chowder into small rice bowl.

11. Sprinkle with chopped spring onion before serving.

12. Best eaten with bread or white rice.

Conclusion

Everyone was very pleased and delighted upon seeing this

 Seafood Chowder served for dinner.

Next time, I am going to remove celery and replace it

 with cauliflower instead.

My kids are not a fan of celery. 

We adults ended up finishing them and we weren’t a fan

 either !

    • This sounds delicious, Peachy! I'm not really a fan of squid, but I love crab and shrimp. I would probably try the recipe as is, though, because my daughters love squid!

      Yes you can replace any of the seafood with whatever that you prefer!
      I like the squid ball instead of the real squid.
      Yes, the crabsticks are nice but real crab flesh would be even better !
      Shrimps are my favorite too and I love the usage of mushroom cream soup instead of using flour.
      I should have insert the picture of Knorr Anchovies granules, I will do that next time.
