Sick and tired of the regular scrambled eggs?
Scrambled eggs with hotdogs and ham are wonderful
combination for American Breakfast on weekends.
Sunny side up egg is great for breakfast too but what about
lunch or dinner?
I had tried different type of ingredients mixed with
scrambled eggs but this Scrambled Eggs with tomatoes and
corn kernels is SUPERB!
This is probably one of the Chinese special egg recipe that
one could not missed for the weekends.
One of my mother’s favorite egg recipe that she used to
cook for us when we were young, simple, easy and fast.
I love this simple egg recipe very much because it is easy
to prepare in just 15 minutes or less, depending on how fast
you can prepare the ingredients before cooking.
Corn- Get a can of sweet corn kernels, discard the water ,
don’t wash the sweet taste off the corn kernels.
Approximately 2 tbsp of corn kernels equals to 150g.
If you love corns, by all means, add in another spoonful!
Shrimps- You can either choose large prawns or shrimps.
I prefer shrimps because they are cheaper and more in
quantity compare to large prawns.
Remove the heads, tails and shells, you might need a little
more patience with the peeling tasks
Sprinkle a little salt over it to marinate them.
Tomatoes – As for the tomatoes, you need to blanch them
in order to soften the tomato flesh.
Don’t boil them in hot water. You will discard the nutrients.
Eggs – Get the Grade A eggs, not B or C because they are
smaller in size and less egg content.
You might need 5 eggs if you choose grade C.
Ingredients
· 300g tomatoes
· 150g corn kernels from can
· 80g shrimps-remove shells, heads and tails
· 3 Grade A eggs-beaten
Seasoning
· salt and pepper to taste
· 1 tsp light soy sauce
1. Blanch tomatoes into a bowl of hot boiling water for
3 minutes.
2. Remove, cut them into cubes.
3. Heat up wok with 2 tbsp of canola oil
4. Stir fry tomatoes with corn kernels and shrimps until
aromatic.
5. Shrimps should turn into pinkish color.
6. Pour in the seasonings. Stir fry a couple of minutes.
7. Beat eggs well before pour into the ingredients.
8. Keep stirring until turned into egg floss, something like
shredded eggs.
9. Dish up and garnish with chopped spring onion.
10. Serve hot
Yield: 3 persons
Ready : in 15 minutes

So far I have kept cheese as company to scrambled eggs. Having a different companion as you have suggested will surely break the monotony.
