Salmon & Cheese Spread with Pitta

I had been away for the last 2 weeks due to my son’s exam preparation.

Now, I am back with more recipes to share with you since tomorrow is his last day for his final quarter term exam.

 

For the last few weeks, I had noticed that the weather had been scorching hot and quite a number of my son’s classmates were down with fever, rashes and headaches.

 

During this time of the year, it is best to avoid deep dried foods such as fritters and spicy food which would rise our body temperature.

 

Today, I had decided to make a simple, yet healthy light lunch for my son; Salmon & Cheese Spread with Pitta.

Ingredients to buy for Salmon & Cheese Spread with Pitta

I had managed to grab a bag of pitta bread from the supermarket at the discount basket. Although the pitta bread were almost near to expiry date, heating up them in the oven would bring back the bread to lovely warm toast fragrance.

 

I also bought a small tub of soft cheese from the discount section, almost 70% off the normal price !

As for the salmon fish, I chose a fresh salmon fillet with less fats. The price of salmon is expensive but worth it for my kid’s healthy diet.

I had also decorated the meal with slices of cucumbers , my son loves the crunchy cool bites of these cucumbers.

Alternatively, you could add garnish with slices of tomatoes, ice lettuce berg or grapes around the plate. This is one of the method of getting your child to eat salads or chopped fruits for smooth bowel movement.

Serves: 3-4 person

Preparation time: 10 minutes

 

Ingredients to make Salmon & Cheese Spread with Pitta

  • 1 steak of fresh salmon- remove bones
  • 1 cup of low fat soft cheese ( 4oz)
  • 1 tsp of lemon juice or lime juice
  • 2 tsp of chopped fresh chives or parsley
  • dash of black pepper
  • 3-4 pitta bread- cut into halves vertically, toasted
  • slices of cucumber or tomatoes for garnish

 

Cooking Steps to make Salmon & Cheese Spread with Pitta

  1. Bring a pan to heat, put in 1 tbsp of butter, swirl around the pan.
  2. Sprinkle black pepper and salt onto both sides of salmon
  3. Grill salmon in the pan until both sides turn brownish and cooked.
  4. Lift up, place in a bowl, smash the cooked salmon with the back of a fork.
  5. Add in 1 cup of soft cheese, lemon juice and chopped parsley into the salmon mix.
  6. Mix well.
  7. For individual serving plates, cut pitta bread into quarters, pile them up.
  8. Add a few spoonful of salmon mixture onto the plate and garnish with slices of cucumbers.
  9. For the remainder salmon mixture, store in a tupperware with tight lid, chill in the fridge.

 

This light meal is suitable for picnic treats, packed lunch for kids to school

 

How to choose fresh salmon

This tips are similar to choosing fresh fish in the market.

Salmon is extremely rich in Omega 3

  • Look out for fresh cut salmon steaks that are firm when touch
  • It should bounce back when you press the flesh lightly
  • Avoid salmon with fats
  • The color of fresh salmon should be “pinkish orange “
  • choose minimum bruises
  • avoid pre-packed frozen salmon which might had been caught more than a week.

    • It is a great recipe but my friend Bob likes it mush because her mother used to cook for him the school going days. Preparation
      Spread the first pita bread with pesto.
      Add the smoked salmon, onion, tomatoes, capers, basil, and Provencal herbs on the pita bread.
      Cover with a generous portion of cheese. Add salt and pepper.
      Close the sandwich with a second piece of pita bread.
      Bake at 230°C (450°F), until cheese is melted. Serve.

      his is a yummy spread that's great with crackers, or stuffed into mini pita halves for an appie. I got the recipe from a friend who sold Schneider's Popcorn Seasonings. I tweaked it a bit for my taste by adding dried dill, parsley and cheddar. 1 hr. Cook is chill time.

      Cream together cream cheese, salmon, cheddar and seasonings until well blended.
      Refrigerate 1 hour or overnight.
      Keeps well in refrigerator.
      Serve in a nice bowl for spreading, or stuff into halved mini pitas.
      Serving possibilities are endless! Use your imagination!
