Sajja Vadalu /kombu vadai is known as Pearl Millet Promises in English. This is purely a South Indian Dish mostly preferred in Kadapa District of Andhra Pradesh, India. This is the dish which is very rich in taste and delicious. This is the only dish which used more green chilis.
Recently I had been to sister’s house when she was preparing the dish. The only variation recently introduced in the preparation of this item is adding some ground nuts to the flour to enrich its taste.
Recently when I visited Smt. Jyothi Prasad’s house where she was preparing the dish. I felt happy to about the recipe of this item. She explained clearly how this is prepared and the ingredients needed to prepare it She also explained that this is the only dish which needs more number of Green Chilies and the specialty of this dish is that the longer you store it the more the taste will be. She gave her valuable time and explained the preparation of this dish.

The modern way of eating, the craze for fast foods and other unhealthy food habits in Urban areas driving the people towards Indian villages in search of healthy foods. The result is most of these items are now finding their place as special items in the star hotels. One such food item is Sajja Vada/kambu vadai which is called Pearl Millet promise in English.
There are varieties of items that can be prepared with Pearl Millets.
In south India, Kambu porridge is a regular diet during summer as it is a good coolant. People prefer this porridge in combination with kambu vada or sajja vada. Unfortunately, it is not found in many of the villages.

The Nutritious value of Pearl Millets
Magnesium -228 mg
calcium -16 mg.
INGREDIENTS:
Sajja Pindi (View Pindi) 2 cup
Green chilies – 15
Salt as per choice
Oil 5 cups
PREPARATION
Mix the ground green chilies, salt, and 3 spoons of oil to the view pindi with the help of salt mixed water and knead the dough for just 2 minutes so that it becomes softer.
Now, divide the dough into small balls of the desired size. Flatten each ball using hand or Rolling Pin. Make approximately 20 flat cakes pressing each ball on a plastic paper. The plastic paper is useful to remove flattened dough easily.
Take 5 cups oil in a separate deep pan and heat the oil. When the oil is sufficiently hot remove the flat doughs on the plastic paper and slip them into hot oil and fry them till they turn into very light brown. Collect each one into a separate can or tin.
This can be served individually or as a side dish for any sambar. But, most of the people prefer to have it individually. These can be prepared without using groundnuts/ by mixing fried sesame seeds while preparing the dough. People also mix nicely cut Onion pieces to bring more taste to the item. But, it can not be stored for a long time.
