I have read a lot about the harm refined flour does to our health and after a lot of thinking – as you know anything prepared using refined flour is indeed tasty – I had to choose between health and a tastier dish.

I could never think of baking cakes using whole wheat flour instead of the refined flour and I was in for a happy surprise. The cake tasted as good. So I won as what I baked not only proved to be healthier but tasty too.
I have replaced refined flour in several of my other dishes.
I baked a date and walnut cake.
Here is the recipe
225 grams whole wheat flour
225 grams sugar
170 grams butter
110 grams chopped walnuts
200 ml warm water
1 1/2 teaspoon baking powder
1 teaspoon baking soda.
450 grams stoned dates
Cinnamon powder
4 eggs.
Method
Remove seeds from dates chop them and soak them in 200 ml of warm water to which the baking soda has been mixed. Keep it overnight.
Next day add baking powder to the flour and mix it thoroughly by using a fine holed colander, thrice. Keep the mixed flour for 15 minutes. Whip butter and sugar to a good blend, add whipped eggs, gently low, mixed flour and dates alternatively spoon by spoon while the mixer is still on. Add chopped walnuts and cinnamon powder and gently turn over the mixture.
Grease a baking tin – 8″x8″x4″ Put the cake mixture gently. Make a slight dent in the middle.
Preheat oven 190 degrees centigrade for 5 minutes and then place the baking tin and bake for an hour.
Remove the cake from the oven and place the baked tin on a net and let it cool. Slowly release the cake from the container.

I've been baking many of my breads, cakes, and cookies with whole wheat flour for years. Mot recipes do turn out just as good, or even better than if made with white flour.
This thought of using whole wheat flour has been in my mind for long but only recently did I start using it.
