Recipes using eggs

In one of my earlier posts I talked about  the versatile egg and its countless uses’ 

Here I will post a few recipes of the several  that are dear to me,  using eggs. 

As mentioned in that post most cakes are made using eggs. Here is one cake recipe 

Date and Walnut cake

Ingredients

450 grams dates

170 gram butter, 

225 grams wheat flour

225 grams sugar

110 grams walnuts

1 teaspoon cinnamon powder

4 eggs

1 1/2 teaspoon baking powder

1 teaspoon baking soda

200 ml warm water

Method to make Date and Walnut cake

Remove seeds from dates, chop them and soak them in warm water to which the baking soda is added. Keep over night. 

Blend together sugar and butter well, mixing it thoroughly

Mix flour and baking powder well and keep aside for a few minutes. 

Beat eggs  and add little by little  to the sugar and butter mixture, mixing all the time. Slowly add flour spoon by spoon and alternate it with dates keep mixing (using a mixer). Add chopped walnuts and cinnamon powder

Line the baking tin with butter. Pour the mixture in the baking tin and bake at 190 c.  for  about an hour.

Curds and maida pancakes with eggs. 

Ingredients

2 eggs

2 cups maida

2 cups curds

1 green chilli chopped fine

A few stalks of coriander leaves chopped fine

Sugar and salt to taste

Method to make Curds and maida pancakes with eggs.

Beat the eggs, add curds, gently add flour and mix well add the other ingredients

Prepare pancakes as usual. 

Enjoy. 

Egg crumpet

Ingredients

2 eggs

1 tomato

2 table spoon grated cheese

Half onion chopped fine

One chilli chopped fine

A stalk of coriander leaves chopped fine

Method to make Egg crumpet

Beat the egg whites till they foam add the yoke and beat again. Add all chopped ingredients and salt to taste.

Heat a shallow frying pan  Apply oil. Pour the mixture and flatten it. Close the pan and cook on slow fire. Turn over the crumpet and cook for another few minutes. And gently remove it.
