Recipe for Butter Chaklis

Chaklis are a speciality among many Indian snacks that are deep fried in oil. There have been variations in this delectable cuisine over the years. Butter Chakalis  are a recent addition.

Butter Chaklis unlike other varieties just melt in your mouth. Chaklis in general are hard on one’s teeth and those who have weak teeth or who are on dentures cannot experiment with them.

There was a shop around here who was specialized in selling Butter Chaklis. Theirs were the best around and they always had a great demand 

Sadly,  for some reason that shop no longer makes quality Butter Chaklis. The last lot I bought was no different from the other varieties though I had  to pay more. Perhaps they found butter to be an expensive ingredient.

Being my favourite among  deep fried goodies I tried my hand at making Butter Chaklis myself and was happy with the results.They say ‘Necessity is the mother of invention’

I would like to share my recipe here.

Ingredients  

2 cups wheat flour – normally maida is used but wheat flour is healthier and therefore I have replaced maida with wheat flour

2 tablespoons unsalted butter
1  tablespoon white sesame seeds washed and dried

1 teaspoon jire (cummin seed)

1 egg

oil to fry

Method:

Place the flour in a muslin cloth and firmly tie it. Place the bundled flour on a sieve in the pressure  cooker. Pour some water in the pressure cooker without touching the flour bundle and cook it with the weight removed. Let it cook for 15 minutes on slow fire.  

Remove flour and cool it. It will form into a hard lump. Mash it up until the flour is once again loose. Add butter, sesame seeds,  jeera, salt to taste and the well beaten egg

Knead thoroughly. 

Use a chakli making mold and deep fry chaklis in oil . 

Cool them and store them in an airtight tin.
