Kids get easily bored with dull salad.
Green vegetables, that is something that
they hate when it is place on the dining table.
What is the difference between salad and
vegetable dishes?? They asked.
All of them look the same! Green !
They shrieked
I know because I had a hard time to shove
this salad into their tight lip mouths.
Therefore, I had thought of something
different that we parents would loved
because Rainbow Salad is so alluring,
looks colorful, tasty and is packed with
various nutrients that kids needed for good
bowel movement and to keep them healthy.
My kids loved the sweetness of tomatoes and
cheese, although they dislike the avocado.
I taught them to dip avocado into
mayonnaise or cheese to overcome the
buttery sticky flavor and they are getting
used to the odd flavor now.
It is easy to prepare and you could easily buy
these colorful fruits at any fruit stalls or
supermarket.
If you cannot find avocado, replace it with
any fruit of the season in your country.
l Carrots
l Guava
l Apples ( Green or Red)
l Oranges
l Pears
l Grapefruits
l Starfruits
This dark green tear shape fruits has more
than 20 different types of vitamins which has
the most nutrients than any other fruits.
Fiber– Avocado has 8% of fiber which helps
to promote easy bowel movements, reduces
that chances of constipation especially for
kids who eats lots of junk food
Iron- Iron is essential to carry the oxygen
throughout your body, to promote smooth
blood flow and to produce energy.
Potassium- Avocado has 150mg of
potassium which helps you to lower your
blood pressure. It also reduced kidney stones
and osteoporosis ( bone loss ).
Vitamin K- Helps your kids bones to grow
healthily, providing sufficient proteins for
growth and reduce blood clotting.
You will bleed a lot if your body is lack of
vitamin K.
Hence, you should encourage your kids to
consume avocado for their own good.
Remember to make your salad colorful and
vibrant to attract your kids temptation.
# 1 avocado
# 1 tbsp lemon juice
# 2 large tomatoes
# 175g Mozzarella Cheese
# salt and freshly ground black pepper
# few drops of balsamic vinegar
# 4 tbsp extra virgin olive oil
# 6 basil leaves, shredded
# fresh basil sprigs to garnish
1. Peel and cut avocado into half and remove
the big seed.
2. Slice thinly and brush each piece with
lemon juice
.
3. Slice tomato thickly and arrange them on
the plate.
4. Cut mozzarella cheese thickly, arrange on
top of the tomatoes.
5. Arrange the slices of avocado in between
the tomato slices.
6. Sprinkle a little salt and black pepper over
them.
7. Sprinkle balsamic vinegar, oil and basil
over the salad.
8. Serve garnish with sprig of basils.
Yield: 4 persons
