Pork Casserole, Celery with Cider Recipe

Main course meal ideas come in many variety if you could mix and match the right ingredients for the meat that you had chose.

 

Watching your weight while enjoying a sumptuous pork meal was heavenly and alive when you feed your other family members, is a daunting task but satisfying.

 

Last week, I wanted to try out pork casserole for dinner recipe since Christmas Day.

 

Pork casserole isn’t hard as it seems if you choose the right type of pork meat for quick cooking process that blends well with other ingredients.

 

Out of the pork recipes that I had tested out, this Pork Casserole with Cider , Celery and Shallots was the simplest and easy to prepare recipe that doesn’t mess up my kitchen.

 

I had chose lean pork meat instead of pork belly because I wanted to reduce the fats and calories for my family consumption.

 

Pork belly is super fatty and high in cholesterol, would not be suitable for dinner unless you are having it once in a blue moon.

 

Choose fresh pork meat sold in wet market, early in the morning where you can buy freshly slaughtered pork for best results.

 

Lean pork is much cheaper than pork belly and quicker to cook at shorter cooking time.

 

In addition, lean pork is able to absorb the nutrients from celery or other vegetables and produces a satisfying meal, with chewy and easy to tear texture.

 

As for the side dish, I chose cooked brown rice for a nutritious meal and strips of iceberg lettuce that gives the crisp and fresh bites.

 

If you are not a fan of brown rice or white rice, you could opt for mashed potatoes or baked herb potatoes for more carbohydrates and energy.

Pork Casserole with Cider, Celery and Shallots

 

 

Ingredients:

  • 15oz lean pork

 

  • 2 tsp olive oil
  • 6 shallots-sliced
  • 2 celery sticks-sliced
  • 4oz button mushrooms sliced
  • 1/2 tsp mixed herbs ( dried)
  • 2 tsp mustard
  • 1/2 pint chicken or vegetable stock
  • 1/4 pint medium dry cider
  • 1 tbsp corn flour
  • Salt and pepper to taste
  • Fresh sprigs to garnish

 

 

Method of preparing:

 

  • Preheat oven at 180C
  • Season lean pork with salt and pepper on both sides.
  • Place pork on the rack of the grill pan, grill it for 20 min, turn to the uncooked side, alternatively until the fats stop dripping.

 

  • Remove the cooked pork from the grill. Set aside to cool off.

Cut pork into cubes.

  • Heat up a pot with a little olive oil.
  • Saute shallots until fragrant.
  • Toss in the celery, stir fry for 5min.
  • Stir in the cooked pork, mushrooms , mixed herbs, stock, mustard, cider and season as according to your liking.
  • Stir well, simmer under low heat for 30-45min.
  • Make sure the pork is tender by poking with a fork.
  • Blend the corn flour with 2 tbsp water, mix until the corn flour mixture is diluted well.
  • Thicken the pork casserole with the corn flour mixture.
  • Simmer for another 5min, turn off heat.
  • Serve hot with fresh herbs and side dish such as white or brown rice, iceberg lettuce or tomato slices.

 

 

Yield: 3-4 persons
