Orange Potato Salad

When summer gets near, we think about picnics, barbecues and delicious food.  I love potato salad with hamburgers, steak, pulled pork and just about another meat. Potato salad goes with everything!  Way back when I was young, I can remember my mother making delicious potato salad but it was orange!  When I got older, I realized how mom would get her potato salad orange.  Her recipe is so easy and so delicious and if you like potato salad, I hope you will try her recipe and let me know what your think about it.

This is mom’s Orange Potato Salad Recipe, it serves about six to eight people, depending on how hungry everyone is!

8 – 10 white or red skinned potatoes

6 hard boiled eggs

Catalina salad dressing

Mayonnaise

Celery Salt

Seasoning Salt

Wash and cut potatoes in pieces (I don’t peel them) and boil until tender. Don’t let them over cook or get mushy. It’s best to have them a big under cooked.

Drain the water and put potatoes in a large mixing bowl.

Drizzle Catalina salad dressing over the hot potatoes then shake the bowl to mix it up.  Add more if you want a tangy taste.  This is the secret ingredient that will turn your potato salad orange.

Refrigerate until chilled.

Chop up the eggs and add to the cooled potatoes.

Add celery salt and seasoning salt.

Mix together with mayonnaise, again starting with a small amount and adding to the consistency you like.

That’s it, a simple and delicious orange potato salad!

Since today is Mother’s Day, I couldn’t think of a better meal to make in memory of my wonderful mother who taught me so much. I miss her so much but I think of her always, especially when I’m baking something that she would make when I was younger.
