Mushroom and Pepper Chilli with Taco Chips

 

If you want to have a more pronounced flavor of mushrooms, Black Chinese Mushrooms or Shitake mushrooms would be a great choice.

 

However, these dried mushrooms are expensive if you compare to a can of button mushrooms which is the reason why I chose the latter instead.

 

Today, I wanted to try some mushroom recipe for a change.

 

Mushrooms and Pepper Chilli is an unique dish where button mushrooms are simmered along with green peppers, mixed with red hot chilli peppers and tomatoes for a spicy and yet tantalizing flavor.

 

Having just mushrooms and vegetables aren’t enough to fill up my hunger pangs.

 

Side dishes as the complimentary food is a must for snacking and nibbling while enjoying the main course dish.

 

You could prepare a simple vegetable salad by mixing iceberg lettuce, tomatoes, cucumber drizzle with olive oil and lemon juice.

 

You can skip off the salad dressings to cut down on the calories.

 

Taco chips are great when I dip them into the mushroom and pepper chilli gravy which was awesome!

 

If you are out of tacos, you could replace with pitta bread, French garlic bread or morning buns instead.

 

Children may not like the spiciness of this dish.

 

Hence, you might have to exclude the red hot chilli peppers and add in chilli sauce , maybe 1 tsp would do no harm.

 

This mushroom recipe dish was our main course meal for dinner today and I am glad to say that every had enjoyed this delicious meal, even my boy asked for a second helping too!

 

Mushroom and Pepper CHilli

Ingredients:

  • 1 tbsp olive oil
  • 1 large onion-chopped
  • 1 garlic clove-chopped
  • 1 fresh red chilli pepper- remove seeds, chopped finely
  • 1 large red / green pepper- remove seeds, chopped
  • 8oz button mushrooms-quartered
  • 14oz fresh tomato-chopped
  • 2 tbsp tomato puree or tomato ketchup
  • 15oz canned red kidney beans, rinsed and drained
  • 1/2 pint vegetable stock
  • 1 tsp dried mixed herbs
  • 2 tbsp cornflour
  • Salt and pepper to taste

 

 

Method of making:

  • Heat up a saucepan with olive oil.
  • Saute onion, chilli and red/green pepper for 5 minutes, until softened.
  • Add in mushrooms , stir fry for another few minutes
  • Pour in the tomatoes, stir in the ketchup, under low heat, don’t burn the gravy.
  • Add in kidney beans, vegetable stock and dried herbs, stir occasionally.
  • Simmer for 25minutes.
  • In a small bowl, mix cornflour with water. Add into the tomato gravy to thicken it.
  • Taste and adjust the seasoning with salt and pepper as according to your taste.
  • If you desire for extra spiciness, add in chilli flakes .

 

 

To prepare Salads

 

Ingredients:

2oz shredded iceberg lettuce- cut into bite pieces

2 tomatoes-quartered

2 inch cucumber or zuchinni, sliced

1 tsp olive oil

1 tbsp lemon juice or apple cider vinegar

3oz taco chips to serve as side dish

 

How to make salads:

  • In a salad bowl, toss together the pieces of lettuce leaves, tomatoes, cucumber, olive oil and lemon juice , toss and mix well.
  • Season with salt and pepper.
  • Serve the mushroom and pepper chilli on a plate with salads and taco chips for nibbling.
