Minty Cracked Wheat with Chick Pea Salad

Eating out is often seen as a dilemma for young adults especially ladies who are watching out for their hourly figure.

 

Some ladies would rather eat light meals but it is often difficult to find main course meals that serve with complimentary salad as a side dish.

 

Look around the factory canteens, university canteens, cafes and restaurants.

 

Most menu serve main course meal with the salads.

 

If you want a salad, you have to pay almost 3/4 of the price of your main course meal !

 

Hence, it is wise to either pack a salad lunch box to work if your office has a mini fridge to keep your salad chill OR prepare a bowl of salad at home after you get back from work.

 

There are a wide selection of vegetable and fruit salads online, but apart from the regular iceberg lettuce, tomatoes and tropical fruits, have you tried cracked wheat salad for a healthier meal?

 

Yes, I had found this wonderful salad recipe from my old cookbook which I had found buried under piles of recipe scrapbooks.

 

Minty Cracked Wheat and Chick Pea Salad, one of the unique style of vegetarian salad that I am sure most ladies are dying to learn a trick or two.

 

Cracked wheat is grains that had been crushed without milling.

Some called it wheat groats or bulghur.

 

It is often sold in a packet under the organic department in the supermarket.

It is nutritious, high in fibre and a best friend to your heart, prevent from contracting cardiovascular diseases and low in calories.

 

Chick peas belonged to the legumes family.

Some called them “Gram or Garbanzo”.

 

Chick peas are sold either raw,milled to powder form or boiled and sold in can food.

If you are lazy to spend several hours of boiling a pot of raw chick peas, you might consider grab a can of chick peas from the supermarket for this salad recipe.

 

However, do remember to briefly wash them and drain of the liquid because it is not wise to consume the preservative contents in the can.

 

Minty Cracked Wheat with Chick pea Salad Recipe

 

 

Ingredients:

  • 120g cracked wheat
  • 180g canned chick peas-rinsed and drained
  • 1 stalk spring onions-chopped
  • 1 celery stick-chopped
  • 1 small yellow bell pepper ( capcium0-remove seeds, chopped
  • 1 small carrot-peeled and grated
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh mint leaves
  • 1 tbsp white vinegar or apple cider vinegar
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 4 hard boiled eggs-crack out the egg shells
  • 1 big tomato-cut into halves

 

 

Method of prepare:

  • Put the cracked wheat into a mixing bowl.
  • Cover it with boiling water and soak it for 20min, until the grains are swollen.
  • Drain the grains well.
  • Mix the cracked wheat with chick peas, chopped spring onions, chopped celery, chopped yellow pepper, chopped carrot, parsley and mint.
  • Mix and stir all the ingredients until well combined.
  • Add in the vinegar and olive oil into the salad.
  • Season with salt and pepper as according to your taste.
  • Mix and toss the ingredients well.
  • Transfer the salad into a tupperware, chill in the fridge for 1 hour.
  • Serve with individual bowl, garnish with quartered hard boiled eggs and halves tomato.

    • Are the cracked wheat cooked already after soaking it for 20 minutes?
      I like salads, but it's the first time I have heard of onewith cracked wheat which is bulghur so i know what it is already , since In our primary grades our teacher would let their maid cook the bulghur, donated by the US government to our school . And it's delicious cooked in milk and some sugar.
      Going back to the salad , I cannot imagine the taste though since there's bulghur which seems out of place in a salad of veggies.

    • Very good recipe. I heard about it somewhere long back. The chickpea and celery are rich in nutrients. The chickpeas are rich in protein and fiber Nothing can replace chickpea with regard to its fiber content. They are especially good for preparation of Salads. Celery is the best source of Vitamin K, B, Vitamin B12, Vitamin C, Potassium, Potassium, and Magnesium.Moreover, this is rich in Fiber also. It mixes well with chickpeas.

      I will prepare this Salad for the next Sunday and see its taste.
