Coffee creamer is a bit of a sweet treat for many of us. It can turn a cup of hot coffee into a bit of a snack, without us having to consume a ton of additional calories. I often like to skip the doughnut or the cookies, and just make myself an instant coffee with a little bit of flavoured creamer in it. I like cream instead of milk in my coffee, so the extra richness satisfies the craving for a little fat. And the sweet flavour of a French vanilla or caramel creamer tells my brain that it can stop demanding more sugar.
The problem is, commercial coffee creamer can be expensive. Here, it’s $3 or $4 for the small bottle, compared to just a little more than $4 for a gallon of milk. And I’ve discovered that sometimes, my body reacts badly when I use a commercial creamer in my coffee. There must be some ingredients in certain brands that I don’t tolerate well. So I like to make my own homemade coffee creamers when I get that craving.
When I make my own creamer from scratch, I can control how sweet it is and decide what flavour I want it to be. I can also get flavours that aren’t available in the commercial brands. This eggnog coffee creamer is a good example of one I simply can’t find in the store. And it really does taste like eggnog, I swear!
1 cup skim milk (I use milk reconstituted from the powdered stuff)
1 cup light cream (I recommend table cream or half-and-half)
2 tsp rum extract
1 tsp vanilla extract
1 tsp ground nutmeg
Whisk the ingredients up in a saucepan and heat a bit over low heat. This helps to mix the cream and milk together a bit better and to infuse the flavours.
You can use this eggnog creamer warm in coffee, right away. Cool anything leftover and refrigerate in a covered bottle or jar. Use by the “best before” date on your dairy ingredients – this is why I kept to a 2-cup batch instead of the original 3-cup recipe. You might even want to half the batch if you don’t use much creamer in your household.
Feel free to tweak the amounts for the flavours. These proportions are good, but you might like your creamer to be more subtle or to have more of a kick.
There aren’t any chemical stabilizers, so this coffee creamer will tend to separate as it sits. You’ll need to whisk it up in the pot for your second cup of coffee. When using from the fridge, shake the bottle up well before pouring the creamer into your cup.

@cmoneyspinner Years ago, there used to be a recipe on the eggnog carton for squares that were sort of like a cheesecake thing with the mixed fruits of a Christmas cake in them. I had clipped the recipe but apparently lost it before I could use it. I wish I could find it again...

As a coffee lover, I would love to try this. Because of loving the taste and aroma smell of a coffee. I am thinking to have a short course of barista in the city. I hope I could enroll myself on September and formally have the training on October this year.
@shavkat That sounds like great fun! I think I might have liked to take a course all about coffee, had such a thing existed when I was younger and had more free time.
