How to Make Raisin Pancake Crepes

I was in the mood of making pancake this morning, my boy loves my Raisin Pancakes very much , especially the crispy and crunchy edges.

Normally, pancakes are soft to touch, thicker in size and rounder.

However, my Raisin Pancakes with Vanilla Essence are alike crepes, flat, round, flat and wide with crispy brown edges.

 

Why add in raisins

Raisins or Sultanas, are alike prunes.

These seedsless black dried fruit, helps your kids to have easy bowel movements, provide sufficient fibre and vitamins to your body.

Adding raisins into your pancakes make a lovely chewy and sweet pancakes and my son loves the crispy edges very much.

 

Procedures

All you have to do is mix plain flour, tapioca flour, sugar, beaten egg , baking powder and fresh milk or powdered milk mixed with warm water and don’t forget the vanilla essence.

The pancake batter is quite thick and sticky.

However, it was the vanilla essence that made the pancake smells lovely and fragrance.

So add in 1 tbsp of olive oil and a bit more water helps to loosen up the batter, perfect to make a flat , big, round pancake with crispy sides.

Baking powder helps the batter to bubble in the beginning, so the centre of the pancake isn’t hard at all.

In order to make a flat pancake, you will have to use a flat spatula to spread wide the batter to the sides of the pan.

Alternatively, you can also swirl the pan so that the pancake batter can spread wide into a circular shape.

 

I don’t use olive oil or any cooking oil into the frying pan because it makes the pancake very oily.

Use unsalted or salted butter, not margarine .

Don’t wait until the butter starts to turn brown.

Once you see the butter starts to melt, swirl around the pan, pour in 2 ladle of pancake batter into the middle of the pan.

Swirl around to spread wide the pancake.

If it doesn’t spread well, use the spatula to spread out.

Make the pancake as thinly as possible.

Your kids will enjoy this crepe alike Raisin pancakes for sure!

 

Here is the Raisin Pancake Recipe

Ingredients

-120g plain flour

-60g tapioca flour

-1 tsp baking powder

-1 egg beaten

-1 tbsp of unsalted butter

– 2 tbsp of castor sugar

-320ml fresh milk

-1 tsp vanilla essence

– 1 tbsp olive oil

 

Fillings:

–  a handful of seedless black raisins or sultanas

 

 

 

Method of making :

  • Slightly chop the raisins and mix with a little baking powder to allow the raisins to float.
  • Sieve the plain flour, tapioca flour and baking powder together into the mixing bowl.
  • Add in beaten egg, olive oil, sugar, fresh milk and vanilla essence together.
  • Mix well until the pancake batter forms into a smooth batter.
  • Add in the chopped raisins into the batter.
  • Mix well.
  • Add in 1 tbsp of butter into the pan, swirl well.
  • Pour in 2 ladle of pancake batter into the middle of the pan.
  • Swirl the pan into a circular motion, spread out the batter.
  • When the edges had turned brownish and crispy, flip over the pancake, wait until the pancake turns brownish again.
  • It doesn’t matter if the raisins burnt a little.
  • Transfer the ready Raisin Pancake with Vanilla Essence into a flat plate.
  • You can drizzle honey over the pancake before serving.
