Left-Over Turkey and Potato Patties

This is a great hit with kids and adults alike for a simple light meal for the next day, after Thanksgiving Dinner.

 

My mom used to buy a whole cooked turkey from the supermarket for Thanksgiving dinner.

 

However, we could never finish up the whole bird because it was too huge, bigger than the biggest chicken that we ever had.

 

Normally, it took us almost a week to finish the whole leftover turkey, so it was kind of bored having leftover turkey everyday.

 

If you family is having the same problem with the left-over turkey as we did, you should try this Turkey and Potato patties for a change.

 

This is a light potato patties which is packed with vegetables and turkey, an all in one meal which is light and easy for the whole family.

 

You could prepare the ingredients in a large batch, freeze them in the freezer so that you could use them anytime you want to after you had boiled mashed potatoes.

 

My kids love these patties especially after school, in the afternoon. They are sick and tired of heavy meals, so Turkey and Potato Patties fit their taste bud very well indeed.

 

 

 

 

Turkey and Potato Patties Recipe

Ingredients:

  • 3 medium sized potatoes, scrubbed clean the skins
  • 1 small onion-chopped
  • 1/2 small carrot-peeled and chopped
  • 6 french beans-remove strings, chopped
  • 1/2 cup spinach leaves-roughly chopped
  • 1 cup cooked turkey-chopped
  • Salt and pepper for seasoning
  • 1 Grade A egg-beaten
  • 1/2 cup plain four or breadcrumbs
  • 2 tbsp Sunflower Oil

 

 

How to make Turkey and Potato Patties

  • Scrub the potatoes clean and then boil them in a pot of water mix with a little salt to dilute it.
  • Once the potatoes had turned soft, test them by poking the potatoes with a toothpick or kebab skewer, turn off heat.
  • Remove the cooked potatoes, transfer them into a bowl of tap water to cool off.
  • Peel off the potato skin which is delicate and easily peel off.
  • Use the back of a stainless steel fork to mash the soft potatoes on a flat plate.
  • Set aside.
  • Heat up a frying pan with Sunflower oil.
  • Saute the onion and carrot until soften.
  • Add in a tablespoon of water if the mixture is too dry.
  • Add in the beans and spinach and cook until the vegetables are wilted.
  • Season lightly with salt and pepper to taste.
  • Add in the vegetables and chopped turkey into the mash potatoes in a big mixing bowl.
  • Season with salt and pepper to taste.
  • Using your hands, shape the mixture into balls and flatten slightly to form round or oval patties.
  • Dip into the beaten egg, then roll into the flour or breadcrumbs.
  • Shake off the excess flour, shallow fry in a frying pan with butter until golden brown and crisp on both sides.
  • Serve with a tasty mayonnaise or salad dressing or chillie sauce.

 

 

Tips:

You can serve with Piquant sauce.

This is the easy recipe for Piquant sauce:

 

  • Chopped tomato
  • 1/2 chopped onion
  • 1 tbsp of chopped coriander leaves
  • 1 tbsp chillie sauce
  • 1 lime juice

 

Mix all together

 

Alternatively, you could serve Turkey and Potato Patties with a nice fresh green vegetables or fruit salad.

    • Thanksgiving is over but most of use still bake turkey and ham for Christmas. And of course there's always plenty of bird left. Yeah we may get tired of eating it. But there's lots of ways to spice up that Leftover bird so we can enjoy it even more.

      TURKEY BACON CHEDDER WRAPS

      -1lb turkey (Shredded or sliced)
      -1lb Kraft shredded cheese
      -1bl bacon
      -Tortilla wraps

      Warm your turkey in the skill with a pinch of salt pepper and Parsley.cook bacon to a crisp,lay your wraps out layer each wrap with the cheese then turkey and top it off with the bacon roll it up like a burrito bake on 350 for 10min or till brown enough.
      THESE ARE GREAT WITH A SIDE OF RANCH FOR YOUR DIP

      SWEET CRISP TURKEY SALAD

      -1lb turkey
      -6 boiled eggs(or desired)
      -1cup of miracle wipe or mayo
      -1cup of grapes
      - 2tbs diced pickles

      Shred turkey as fine as you like,dice up boiled eggs mix in mayo then pickles finish it of by adding grapes and mixing all up

      turkey bacon sausage pizza

      - 1 roll of pizza crust
      ( Or buy crust made already)

      -Sausage -turkey -bacon
      -shredded chedder & mozzarella cheese
      -1 12oz jar pizza sauce

      Roll your crust out spread pizza sauce on to crust layer with cheese then top with all your meats and bake to desired
