Okay, let us all agree, fried rice is the meal to prepare in 20 minutes or less, right?
One way to learn from a chef without him
knowing is to order a take away , bring back
home and use a spoon to spread out the
ingredients included in the fried rice.
Sounds like involving myself into private
investigation job, eh?
Today, I had ordered a take away from a
local Indonesian restaurant ,
Pineapple Fried Rice which is one of its
recommended dish from the chef.
Smells aromatic, tasted delicious with a
satisfy amount of pineapple cubes and
yellowish fried rice which I believed was
tainted with tumeric powder.
The aromatic smell of pineapple combined
with chicken cubes, chopped chives and long
beans were awesome and the color of
yellowish rice was blended with turmeric
powder.
I was out of chicken meats, so I swapped the
ingredient with hotdog slices instead.
You could buy fresh pineapple for freshness
but you would use half of the pineapple for
this rice recipe.
Remove the “eyes” from the pineapples.
Those eyes are the thorns which should not
be consume.
They will make your tongue itchy!
I prefer to slice off the stems because they
are hard to chew.
So, those stems, toss them into your salads
instead.
For the remainder pineapple flesh, try
making pineapple juice, pineapple salad,
curry stew with pineapples or just eat raw
pineapples as slice fruit.
This is another one of the rhizonme family.
It is yellowish in color with a slight fragrance.
It is available in powder form and can last
for a very long period if kept in air tight
container, in the fridge.
If the recipe requires fresh tumeric, you
can buy it at the wet market, supermarket
for a very cheap price.
However, I prefer to use powder tumeric for
# 1 tsp turmeric powder
# 1 rice bowl pineapple cubes
# 2 long string of long beans (chopped )
# 1 handful of chives (cut quarters )
# 3 cloves garlic ( chopped )
# 1 medium onion ( chopped )
# 1 egg ( beaten )
# 2 hotdogs ( sliced )
# some overnight rice enough for
3-4 persons
# salt and pepper to taste
1. Fry scrambled eggs. Set aside.
2. Fry slices of hotdogs until cooked.
Set aside.
3. Heat up wok with 1 tbsp of oil.
4. Stir fry onion and garlic until fragrant.
5. Add in chives and long beans, stir fry for
5 minutes
6. Add in pineapple cubes, stir fry for 2
minutes.
7. Pour in overnight rice and stir well.
8. Sprinkle turmeric powder on top the rice.
9. Season with salt and pepper.
10. Stir fry again, make sure the turmeric
and ingredients are well combined.
11. Turn off heat and serve hot with garnish
chopped spring onion or crispy shallots.
12. Yield: 3-4 persons
