Kids Snack: How to make Tuna Croquettes

Children are picky eaters, which I believe that most parents would agree with me.

 

It is not easy to trick your children to eat healthy food unless you could dress up those healthy food into their favorite food.

 

One of the fried finger food that my kids loved best is Chicken Nuggets from McD.

 

If I could turn tuna into nuggets, then maybe my kids would start to like Tuna Croquettes instead.

 

I had decided to try my luck on making Tuna Croquette for teatime snack and reserved some of them for tomorrow’s breakfast.

 

Little did I expect that these croquettes became popular among my kids and their cousins, when I brought the warm snacks to my sister-in-law’s house for a simple teatime snack gathering .

 

This recipe is easily prepare by purchasing a can of tuna flakes in the brine.

Do not buy tuna flakes with other flavor such as mayonaise tuna or curry tuna because you will need the original flavor of tuna to attract kids taste buds.

 

Some kids do not like mayonnaise or curry flavor.

 

In addition, tuna flakes in the brine easily combine well with mashed potatoes, bring out the delicious taste of crispy and soft chewy croquettes which are alike chicken nuggets.

 

If you are out of fresh milk, you could use your child’s formula powder milk mix with warm water.

This is much healthier for them and provide more calcium plus nutrition for your children.

Tuna Croquettes Recipe

 

Ingredients:

  • 440g can tuna in the brine
  • 200ml fresh milk
  • 2 tbsp olive oil for frying
  • 1 medium onion -chopped
  • 4 tbsp plain flour
  • 1 tbsp fresh parsley-chopped
  • 2 tbsp lemon juice
  • 3 eggs-beaten
  • Salt and pepper to taste
  • 175g breadcrumbs

 

 

Method of making:

 

  • Drain the tuna flakes, transfer to a mixing bowl.
  • Mash the tuna flakes with the back of a fork.
  • Set aside.
  • In a frying pan, heat up with olive oil.
  • Saute the chopped onion until soften.
  • Stir in the flour, keep stirring for a couple of minutes, don’t let it burn.
  • Slowly pour in 1/2 of the fresh milk into the pan, keep stirring.
  • Allow to simmer.
  • Stir in the mashed tuna into the pan.
  • Keep stirring to mix the tuna, onion and milk together.
  • Add in the chopped parsley, lemon juice, 1 egg , salt and pepper.
  • Mix until all ingredients are combined well.
  • Turn off heat.
  • Transfer the tuna mixture into a shallow plate, cover with a plastic clig wrapper, chill in the fridge for 1 hour.
  • Put the remainder eggs in a bowl, the breadcrumbs in another bowl.
  • Scoop up  one heap tbsp of tuna mixture, form into a ball.
  • Dip each tuna ball into the egg and then coat with the bread crumbs.
  • Coat each of the tuna croquette evenly.
  • Heat up wok with sufficient oil.
  • Dip in tuna croquette separately into the wok, don’t allow them to stick to each other.
  • Keep stir and flip them until crisp and golden brown.
  • Then, transfer each croquette to a paper kitchen towel to absorb excess oil.
  • Serve hot with mayonnaise, mustard or chilli sauce.

    • Oh I love this recipe of yours. I will be copying this because I have read its ingredients and they are few and easy to make. Besides, you said that we can keep some on the ref (will it be in the freezer) so that at anytime we can fry them.

    • Is this croquettes look like nuggets of McD? Unfortunately, my children don't really like Tuna fish because I serve not really often in my home as the Tuna in tin is getting expensive and I afraid contains too much salt or preservative.

      Thanks for the recipe, I might like to modify a bit the recipe for catering the taste requirement of my children for instead.Maybe fish chip? fish meat?

      Why not,right?As long as the ingredient is healthy and good for the children, right?
