How to make Potato Patties with Dipping Sauce

My kids are great fan of Potato Patties.

They love to dip into the Spring Onion Dip or even plain mayonnaise.

This Potato Patties are similar to Malaysia’s potato patties fondly called “Kentang Bergedil.”

Kentang Bergedil is a mixture of mashed boiled potatoes with minced chicken and spring onions but these Potato Patties with Spring Onion Dip is quite different.

These patties are round mashed potato with mixed vegetables instead of mince meat.

Then it is deep fried as finger snack.

The best part is the dipping sauce.

You can have plain mayonnaise , chillie sauce or Spring Onion Dipping sauce.

 

#1 – How to prepare mashed potatoes

You could either buy Holland or USA potatoes , whichever is available in the market.

I had noticed that USA potatoes are easily soften when boiled whereas Holland potatoes are time consuming because it takes a longer time to soften the potato texture.

Always wash or brush the potato skin well. Do not peel off the skin because it contains more nutrients than the potato inner flesh itself.

Cut the potatoes into halves, bring a half pot of water to boil, toss in the potatoes with a little salt and boil under medium heat.

Use a kebab skewer or a fork to poke into the potato flesh. If it penetrates easily or breaks easily, your potatoes are done.

Remove from the pot, transfer to a bowl of cold water, peel off the skin.

Then transfer the potatoes onto a flat plate, mash them with the back of a fork.

 

#2- How to prepare Mixed Vegetables

There are 2 options:

  • Buy a bag of mixed vegetables in the supermarket- a mixture of frozen green peas, carrots and corn kernels
  • Make your own mixed vegetables with fresh ones.

 

If you are looking for an easy way out, buy a bag of mixed veggies.

Otherwise, I would recommend you to make your own veggies.

Peel a small carrot, cut into tiny cubes

Use a teaspoon to scoop out the corn kernels from a raw corn cob

Green peas, either you can buy a can of readymade peas or chop mustard greens, spring onions or chives

 

Here is the recipe for Potato Patties With Spring Onion Dipping Sauce

Ingredients:

# 300g potatoes, boiled, peeled, mashed

# 2 tbsp fried onions

# ¼ tsp turmeric powder

# ¼ tsp chilli powder

# salt and pepper to taste

# 1 egg

# 70g mixed vegetables, chopped

# oil for frying

 

 

Method:

  1. Place potatoes, onions, turmeric and chilli powder, salt, pepper, eggs and mixed vegetables into a mixing bowl. Mix well.
  2. Shape into oblong patties as picture shown.
  3. Heat up deep fryer with oil. Deep fry patties until golden brown.
  4. Drain with paper towel and set aside.

 

 

 

Spring Onion Dip

Ingredients:

#150ml light sour cream

# 2 tbsp finely chopped spring onion

# salt and pepper

# 1 tsp finely grated ginger

# a pinch of ground black pepper

 

 

Method:

Mix all ingredients into a small bowl and chill before serving.

Yield: 3-4 persons

    • I have learned a good lesson during my journey to Varanasi. We should eat an item at where it should be eaten.
      When I am reading this blog I felt something was striking in my mind as somewhere I heard this name. Yes...it is in the train while going to Varanasi. The vendor was busy with his business. He was carrying a big basket and there were many items meant for taking as snacks. I was waiting for some light tiffin as I had no breakfast while getting into the train. I asked for these items with the vendor. He told me that they are not on the train and advised me freely to go for some snacks available with him.
      I asked him to suggest a good and nice snack. He said "You go for Potatoe Pattis.They are fresh and are full of vegetables". I took two without any idea.
      I tasted one along with a sauce (chilly). It was really great. I finished another one also.
      But, the effect is that I could not take my lunch when it was served to me. The only reason was that the Potatoe patties were very strong enough to be digested though they were not served with Onion dip.
      After reaching Varanasi during a casual conversation I told my friend about them. He took me to a restaurant and there I tasted the real Potatoe Patties. Yes, They are really great. They are very nice than hose I had those in the train. During my return journey, I could not prefer them when they were offered to me as I tasted the real Potatoe Patties.
      The Potatoe Patties should never be preferred while making a train journey. Always prefer eating them in some nice restaurants only.

      i finished your post and ready to make the potato patties i like it alot myabe next weekend i will do it, but reaching the clever you did them at, is goign to take long time from me, really great tips and serving is the best too, onion or garlic dips are good but i like it with youghurt, its great with some salty dips and preferred with eggs too
