How to bake Perfect Fluffy Jacket Potatoes

Fluffly Jacket Potatoes , became our family’s favorite main course meal overnight.

There are 2 ways to prepare this delicious potato recipe;

  • Bake the potatoes in the oven
  • Boil the potatoes in a pot of water

The differences between the both are:

Bake potatoes: take a longer time to soften the potato flesh, you might need to oven bake 40min, waste of energy and time. Gives the aromatic buttery flavor.

Boiled potatoes: take a shorter time , cooks easily, approximately 15min will do the job. Taste bland and wet . Hence, you need to pat try before bake in the oven to turn the flesh firmer.

After you had cooked the potatoes, pat them dry before slicing off half of the potato to form a cup with the outer skin.

Remember to scoop out the cooked potato flesh slowly and carefully because you might the skin and it couldn’t hold the mashed potato later.

When you scoop the flesh, use a stainless steel teaspoon, scrap slowly, leaving a thin layer of flesh onto the skin.

As for the base of the potato cup, leave a little flesh inside.

In order to make the potato cup stand on its own, slice off the bottom (base ) a little, a flat surface.

I would suggest that you buy large USA potatoes which are bigger in size and flesh is much softer and tender than other types of potato.

 

If you are looking for a healthy potato meal, I would strongly recommend you to try this Fluffly Jacket Potato, baked in the oven and less butter is used in this recipe.

Less calories, more fibre and nutritious.

It is also ideal for breakfast, light lunch or midnight snack if you are burning midnight oil when writing posts at Literacybase.

 

 

 

 

Fluffy Jacket Potatoes

 

Ingredients:

  • 4 potatoes
  • Olive oil- brushing
  • 25g unsalted butter
  • 3 eggs-separate the whites and yolks
  • 85g grated Cheddar cheese
  • Salt and pepper to taste
  • Parsley- garnish
  • 1 tsp 5 spice powder

 

Method:

  • Preheat oven 180C
  • Scrub the potatoes with the skin intact. Make sure the soil and dirt is washed properly.
  • Bring a pot of water to boil.
  • Toss in the washed potatoes with a little salt.
  • Allow to boil until potatoes soften.
  • Use a toothpick or skewer to poke into the potato skin.
  • If easily skin in, the potatoes are cooked.
  • Remove and pat dry.
  • Cut off the tops of the potatoes.
  • Use a spoon to scoop out the cooked potato flesh.
  • Transfer the flesh into a bowl.
  • Make sure the potato skin is still intact, forming a cup.
  • Mash the cooked potato flesh with the back of a fork
  • Mix in butter, beat in with egg yolks, grated cheese , 5 spice powder, salt and pepper to taste
  • In another bowl, whish egg whites until stiff.
  • Fold into the potato mixture.
  • Mix well.
  • Spoon the potato mixture into the potato cups, even the surface.
  • Garnish with chopped parsley, sprinkle a little cheese on top.
  • Bake in oven for 20min.

 

Leave the baked Fluffy Jacket potatoes in the oven until you are ready to have them.

Keep the potatoes warm at all times.
