Ginger is known as a wonderful spice in Chinese, Malay and
Indian cooking methods.
Its’ natural strong, spice flavor produce a fragrant smell in most
dishes, both Asian and Western cuisines.
I love to use ginger in my daily main course meals, cookies, cakes
and beverages.
One of my favorite fried rice recipes is this dish Fried Rice with
Ginger Strips
According to Chinese beliefs, ginger benefits our stomach and aids
in digestion of oil, fats or hard to digest food.
Woman who is in confinement after birth of a newborn baby, had
to ( compulsory ) to eat food mixed with ginger in order to expel
cold and wind in the body.
It is believed that ginger aids in producing heat in the woman body,
release sweat, “unclean” fluids in the body and keep the abdomen
warm at all times.
In addition ginger helps to protect your body from cold, runny
nose or flu.
Since raw ginger taste a little spicy, you could add in slices of
ginger into your stir fry recipes to enhance the taste.
You don’t have to consume the ginger itself, just allow the ginger
juice to penetrate its nutrients into the food.
l Squeeze out ginger juice, marinate with chicken or pork
meats
l Cut raw ginger into match sticks, deep fried until crispy.
Crunchy bites goes well with hot porridge, steamed fish or
meats and soups.
l Replace chopped garlic with slices of ginger.
Induce the oil with ginger flavor.
l Boil 2 cups of water with slices of ginger, mix with brown
sugar or honey to cure flu, cold or runny nose.
l Add slices of ginger into coconut rice milk
( nasi lemak-Malay staple food) to enhance the flavor
l Add ginger into soups to expel wind, produces heat and
warm up the stomach
Whether you are in the confinement period or as fit as a horse,
try this Fried Rice with Ginger Strips for a change.
You may love ginger after a bite !
Cook Time:
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Ready To Serve Time: 25 minutes
· 1 tbsp minced ginger
· 2 bowls of overnight / cold rice
· 150gm shrimps-shelled
· 2 eggs- beaten
· ½ tbsp preserved shrimp sauce ( optional )
· 1tbsp finely chopped shallots
· 1 sprig Chinese parsley / basil
· 2 tsps dark soy sauce
· 1 tsp light soy sauce
· 1 tsp sugar
· 3 tbsp how water
Method of cooking:
Remove the shells and devein the shrimps.
Season with a little salt and pepper. Set aside.
Stir fry the beaten eggs in a wok.
Break the cooked eggs into small pieces.
Remove and set aside.
Heat 2 tbsp of oil in the wok.
Stir fry ginger and shallots briefly.
Stir in preserved shrimp sauce ( optional) and shrimps.
Stir fry for 1 minute before pour in the overnight/ cold rice.
Stir fry vigorously to separate the bulky rice.
Use the back of a fork to press down the bulky rice in order to
break it apart.
Pour in the seasoning while stir frying.
Fry until the rice is hot and fragrant.
Add in the fried eggs and mix well.
Turn off heat and serve with garnish chopped Chinese parsley or
basil.

I love fried rice especially the chao fan of Chowking though sometimes I cook my own version of fried rice at home. I have not known the ginger for fried rice and as I read the article, I was given the idea to use it in my future recipe. I just hope the kids would like it because of its spicy taste.
My Japanese friend introduced me to ginger. I have never regretted it. :)
