Most Sagittarians love hot pot filled to the brim with chunks of chicken flesh with
loads of chunky vegetable tubers or mushrooms. The more the merrier, more
ingredients and thick gravy sauces!
This Chicken Hot Pot is one of my favorite , yet a simple all in one chicken recipe that
I love best because it is simple to prepare.
I had copied this recipe from an old magazine back in the 1980s from my mom.
This is my mom’s favorite chicken recipe too because both of us are lazy to cook different dishes for dinner.
Hence, a hot pot is an ideal dinner recipe to serve your Sagittarian family member.
I had chosen 2 chicken thighs, chopped into chunks , with lots of chicken flesh and
bones, gives a lovely flavor of the chicken juicy bones.
As for the vegetables, carrot and potatoes are great combination for a hot pot stew.
Carrot induce the natural sweetness which potatoes absorbs the gravy easily.
The secret to this Chicken Hot Pot is the hot bean paste which is also known “taucheo”.
You can find this salted fermented soy bean paste sold in small glass jars , in the hypermarket.
Although it is quite salty, just 1 tsp of taucheo with oyster sauce gives the right flavor !
It will take approximately 20-30 minutes to simmer this chicken stew in order to soften the ingredients.
If you are using a pressure cooker, it will shorten the cooking time.
– 2 chicken thighs- chopped into chunks
-1 carrot-peeled and cut into chunks
-2 medium potatoes-peeled and chut into chunks
– 3 medium tomatoes- quarters
– 2 clove garlic-chopped
-1 medium onion- quarters
-1 bay leaf
-1 tsp hot bean paste ( taucheo)
-1 tbsp tomato sauce
-1 tbsp oyster sauce
– water to simmer
Tips:
If you cannot buy chicken thighs, you could buy a tray of chicken parts .
Alternatively, if you prefer more chicken flesh, try buying chicken ribs or quarter chicken.
Cut them into convenient pieces.
However, remember to remove the chicken fats and skins before cooking.
These fats are not healthy to consume.
In addition, the surface of the gravy will induce fatty oil.
For more nutrition, try adding button mushrooms or shitake mushrooms into your chicken stew.
I had added button mushrooms last minute before adding the sauces.

Looks very tempting and yummy when dinner time is approaching now. It seems very easy to prepared with the soy bean paste. I might give a try in the future when I lazy to cook few dishes for dinner or lunch, just one pot is good enough to be served,and I can come back here very quickly! Hehe!
