Easy Chinese Fried Rice For Kids

Chinese Fried Rice is a famous local cuisine that you can dump in any ingredients that you can find in your fridge, that is what my mother said.

 

Whenever she is lazy to cook lunch or dinner, Chinese Fried Rice is her quickest and easiest way out to satisfy our hunger pangs.

 

If you are not keen in cooking 1-2 hours in the kitchen, you should try my Mom’s Chinese Fried Rice for a change.

 

Here is how you prepare Chinese Fried Rice:

# Cold Rice

 

The secret to this old timer recipe is using cooked overnight cold rice. Just cook extra white rice for dinner, keep the remainder rice in a tupperware and chill in the fridge.

 

You see, overnight cold rice is loose and brittle compare to freshly cooked rice which is warm and wet.

 

In order to cook Fried Rice, you will need dried up cooked rice. Warm rice which contains water would make your fried rice sticky and yucky. It would taste like a fried oatmeal.

 

 

# Vegetables

Now the most common vegetables used in CHinese Fried Rice is “Mixed Vegetables” where you can buy from the supermarket. It comes in a big bag, a mixture of frozen green peas, carrot cubes and corn kernels. These veggies are packed with fibre and nutrients but if you prefer fresh veggies, you could opt for :

 

  • Chopped long beans
  • Chopped spring onions or chives
  • Chopped french beans
  • Chopped mustard greens

 

 

#Meats

 

Now this is optional. If you are on the vegetarian diet, exclude meats from this rice recipe. You can replace them with dried Chinese black mushrooms or slices of button mushrooms.

 

If you want more meat in your Fried Rice, you could marinate light soy sauce and pepper into :

Shrimps

Tiger prawns

Chicken Fillets

Pork Strips

Fish fillets

#Seasoning

 

The secret to Fried Rice Seasoning is simple; Light Soy sauce , salt and pepper!

 

You can buy those pre-packed fried rice seasoning sold in supermarket but I wouldn’t recommend that because those are high in salt and MSG.

 

At least, you could control your salt intake at home, right?

 

 

Chinese fried Rice Recipe

Ingredients:

  • 4-5 cups of overnight cold rice (cooked)
  • 100g fresh shrimps- remove shells and tails
  • 100g chicken fillets
  • 1/2 cup green peas or mixed vegetables-defrost by soaking into a bowl of water
  • 1 piece of fish cake-sliced
  • 2 cloves garlic-chopped
  • 1/2 piece salted fish ( ikan masin )-chopped
  • Mustard green leaves or 1 stalk spring onions- sliced or chopped
  • 1 egg-beaten
  • Salt and pepper to taste
  • 1 tbsp light soy sauce

 

 

Method of cooking:

 

  • Bring the wok to heat with 1 tbsp of sunflower oil.
  • Stir fry chopped salted fish until golden brown, remove from wok.
  • Saute chopped garlic with the remainder salted oil until fragrant.
  • Toss in shrimps, chicken and fish cake slices.
  • Stir fry until shrimps turned pinkish, chicken semi cooked, fish cakes cooked very quickly.
  • Add in the mustard greens, stir fry until cooked.
  • Loosen up the cooked overnight cold rice.
  • Toss in the rice, quickly toss and turn.
  • Spread out the fried rice across the wok, pour in the beaten egg in a circular form around the rice.
  • Quickly turn in the fried rice, keep stirring until the separated egg is coated to the rice a little here and there.
  • Splash in light soy sauce in circular form, stir fry again.
  • Add in 1 tsp of salt and a few dash of pepper.
  • Keep stir fry until the seasoning is blended well with the fried rice.
  • You can test out the taste of the fried rice.
  • Keep tasted bland, pour in 1 tsp of light soy sauce instead of salt.
  • Garnish with chopped spring onion or crispy fried shallots.

 

 

Tips:

You can serve complimentary scrambled eggs, sambal sauce, chillie sauce whichever you preferred.
