Divinity Pecan Candy

You can really put whatever you like in divinity from crushed peppermint, candied cherries to any kind of nuts you like. A bag of this delightful candy would make great gifts.

Ingredients:

• 4 cups sugar
• 1 ¼ white corn syrup
• 1 cup water
• 4 egg whites, ½ cup
• 1 teaspoon vanilla extract
• 4 cups chopped pecans

Now let get it cooking!

Instructions:

1. Mix sugar, water, and syrup in medium size saucepan.
2. Cook to firm ball stage, 252 degrees Fahrenheit, use a candy thermometer.
3. In a large mixing bowl beat egg whites until stiff, add ½ of cooked syrup, continue beating.
4. Cook the remaining syrup to 262 degrees Fahrenheit on the candy thermometer; add to other mixture.
5. Beat until thick and candy have lost its gloss.
6. Add vanilla extract and pecans.
7. Drop in small portions on wax paper.
