Curried Tuna Pie for Packed Lunch

Canned tuna is a versatile ingredient that the meaty texture is easily cooked as a main course dish or baked as a tuna pie for lunch break.
The best thing about tuna flakes is ; it is convenient, easily bought from the supermarket and comes out conveniently out from the can that you don’t have to worry taking out of the bones or scraping off the scales from a fresh tuna.
I love to add in tuna flakes to my recipes but I had never tried my hands on tuna pies which I had yearned to learn from the block.
One of the best thing about tuna flakes is the flavor.
It blends perfectly with any other ingredients without losing out the orifinal flavor.
Today, I had decided to try baking Curried Tuna Pie for my son’s lunch box since he had to stay back for tuition class at school.
It is compulsory for Primary 3 and 4 pupils to stay back in school for extra tuition class and no exemption.
In addition, the canteen is closed at a certain time until the afternoon session pupils break time.
Hence, this Curried tuna pie would make a perfect quick late lunch for him since the break time is around 3pm.
I decided to bake today because he will be leaving for school as early as 5.30am, so no time to bake tomorrow morning.
What I could do is keep the tuna pie warm in the microwave oven tomorrow morning before I keep it in the lunch box.

Curried Tuna Pie Recipe

Ingredients:

720g Holland/USA potatoes-peeled and cut into chunks
180g cauliflower-soaked and cut into florets
1 tbsp butter
1 small onion-chopped

1 celery stick-chopped
60g plain flour
450ml low fat milk ( fresh milk or powdered)
2 tsp curry powder ( any flavor )
1 tbsp sultanas / raisins
420g canned tuna in brine ( drained and mash the tuna flakes)
1 tbsp chopped fresh parsley
Salt and pepper to taste
Method to prepare:

1)Bring a pot of water to boil.
2)Toss in the chunks of potatoes into the pot, add in a little salt.
3)Allow to simmer to soften them.
4)Remove the cooked potatoes from the pot.
5)Now, toss in the cauliflower florets, cook them for 10min until soften.
6)Remove the cooked cauliflowers from the pot.
7)Preheat the oven at 180C.
8)In a non stick frying pan, saute the onion and celery with butter.
9)Stir fry for 5min.
10)Sieve in the plain flour for a few seconds. It may turn out dry.
11)Add in 3/4 of the milk slowly.
12)Bring to boil, keep stirring the milk mixture until it thickens.
13)Then, add in the curry powder, sultanas into the gravy, keep stirring the mixture in order not to burnt it.
14)Add in the mashed tuna, chopped parsley and cauliflower.
15)Season with salt and pepper as according to your taste.
16)Pour int the cooked dish into an ovenproof baking dish.
17)On a flat plate, mash the cooked potatoes.
18)Transfer to a bowl.
19)Add in the remainder low fat milk into the mashed potatoes, beat until creamy.
20)Spoon in the mashed potato over the top of the tuna dish.
21)Bake in oven for 30min until brown crispy surface is formed.
22)Serve hot
